There is a magazine called Vegetarian Times that has some recipes on its website: www.vegetariantimes.com
www.godsdirectcontact.org and follow the vegetarian era links .......good luck
I recommend Culinary Chef at http://www.culinarychef.com for vegetarian recipes and full menus. The site is not exclusively vegetarian, but has plenty of vegetarian dishes.

They are said to be releasing a new site called Pure Chef at http://www.purechef.com that will be specifically tailored for vegans, vegetarians, and those who suffer from food allergies, but the site is not yet released. I hope that this helps.
Check out a Yahoo group called ';The shortcut Vegetarian';
GO TO ASK.COM AND PUT IN VEGITARIN FOOD I SHOULD KNOW I AM A VEGITARIN
Check out the link in my profile; the recipes are all easy. Look at Veggie, Pasta, Soups, and Sides.
buy a vegitarian cook book...those usually have alot of good recipes...and there ez to find.

I love www.vegweb.com. They have tons of great recipes and most are pretty easy. Every recipe I have tried from this site has been great. My non veg mom even likes them.

I reccommend these recipes ....they are delisious and pretty easy

Baked French Onion Soup

Ingredients (use vegan versions):

1 onion, halved and sliced

1 cup vegetable stock

1 1/2 teaspoon cooking wine

1 teaspoon soy sauce

1 tablespoon flour

1 teaspoon sugar

1/4 teaspoon onion powder

3/4 teaspoon garlic powder

1/2 teaspoon dry mustard

pinch of thyme

olive oil (to cook onions in)

toppings: slice of toasted bread or homemade croutons

2 slices or handful shredded vegan mozzarella cheese

1 green onion, chopped

Directions:

Cook onions in olive oil over low to medium heat in pot, until caramelized, (I cooked mine for 45 minutes) stirring often.

Preheat oven to 450 degrees.

Add all ingredients to onions, and bring to a boil. Turn down to medium heat and cook for a while to let the flavors blend.

Pour into an oven safe bowl, top with a slice of toasted bread or homemade croutons, and place 2 slices of vegan mozzarella cheese on top. sprinkle with fresh ground pepper, green onion, and bake until bubbling and browned.

This recipe is delectable and delicious!!!

Serves: Serves 1

Preparation time: 60 - 75 minutes

Cheesy Pasta Bake

Ingredients (use vegan versions):

1 box Mori Nu tofu, extra firm

enough pasta to fill an 8x8 pan (hand full)

8 ounces of your favorite marinara

1/2 block of vegan gourmet mozzarella

spices: parsley, basil, garlic

optional: cayenne

Directions:

Cook the spaghetti halfway. You don't want it to be mushy once you bake it.

While that's cooking, drain the box of tofu and put it into a medium/small bowl. Squish with a fork into small pieces.

Add the parsley, basil and garlic (add more of the spices you like best). I mix in a lot of all three. Blend with your fork but don't squish the tofu into too tiny of pieces.

Then, grate your mozzarella. Use 1/3 to 1/2 of a block of vegan gourmet mozzarella. Put aside.

Drain pasta. Put the pasta into the pan. Add all of the tofu ricotta mix. Mix them together.

Now pour your pasta sauce on top of the pasta/ricotta mixture. Pour a little more sauce than you think, so it doesn't dry out.

Mix all three ingredients well. You can even put some of the extra ricotta on top, if you had any left over.

Once you've mixed the pasta, ricotta and sauce so that it's equally spaced in the pan, simply add the vegan gourmet mozzarella on top. Use as much as you like.

It's important to spray the top of the cheese with your Pam or other oil spray. This makes the cheese on top melt smoothly and have a golden color when it's done.

Bake on high, at least 400 degrees (even up to 500) until it bubbles. Don't be afraid to let it cook until it bubbles and starts turning brown.

Serves: 4

Preparation time: 30 minutes

And since you are a dairy eating veg you can use reg cheese on these recipes....or none at all if you prefer.

Good luck and Enjoy!
