Toasted vegan cream cheese bagel with herbs and tomato
Make tofu fillets or cutlets breaded with sauce
Quick casserole, mix your favorite veggies chopped together with olive oil and fry, add nutrional yeast sauce; with vegan margarine mix together with breadcrumbs and put in a cooking dish poor mixed veggies onto it and then cover with more of the breadcrumb mix and top layered with green beans and cook for 10-40m or replace breadcrumbs with pasta of your choice
Easy vegan mac and cheese, cook pasta of your choice, make vegan cheese sauce and pour of cooked pasta.
Make a burger with either pre-made vegan burger patties or cooked portobello mushroom or cooked mushed mixture of vegetables or beans and add your favorite fillings, or make sloppy joes with a cup of cooked TVP covered in BBQ sauce in a cup of water, mix onions, tomato, bell peppers, etc cook until done serve on top of buns
Vegan sushi with brown rice, white rice, couscous, or quinoa, vegetables of your choice, maybe tofu, tempeh, portobello mushrooms or seitan and wrap in nori, roll and cut
Paprikash, cook your favorite vegetables with favorite legumes and add a lot of paprika and onions and green bell peppers
Chinese fried rice, fry brown rice and vegetables in a skillet with olive oil and add soy sauce or Bragg's liquid aminos and liquid smoke
Vegan hot dogs, cook Smart Dogs or another brand of vegan hot dogs and put in a hot dog bun with your favorite condiments, even make chili dogs or frito pie
Vegan fish tacos, grill tofu and wrap in seaweed dazzle with olive oil and wrap in tortillas with lettuce and dressings of your choice
Bake a potato add your fixings, make a BBQ potato with BBQ sauced setien, a broccoli and cheese potato with broccoli, vegan cheese, and vegan butter, etc
Cook cauliflower, squash, broccoli, and peas together, mush slightly add vegan cream cheese, or vegan sour cream, or vegan butter
Power vegan smoothie with fresh fruits of your liking, plant milk, bananas or tofu, flaxseeds, pumpkin seeds, and maybe a sweetener of your choice; you can also add nuts, spirluna, protein powder, etc
Quick vegan waffles or pancakes with syrup, vegan butter or vegan cream cheese, and fruit
Cereal or oatmeal with fortified alternative to milk (such as soy milk, almond, rice, hemp, etc), with nuts and fruits on the side (or mixed in!)

Some of My personal fave easy veggie recipes are;
Scoop out a tomato, fill it with couscous ( sometimes called bulgar wheat) with some onion( or scallions) a little green pepper, a bit of garlic ( if you like) some diced celery, maybe a little red pepper or yellow for some colorl . Actually anything goes that you like! I toss mine with either an oil and vinegar dressing or some vinegrette ( raspberry is awesone) Scoop out the tomatoes and stuff and chill. Or if you dont have large tomatoes, you can just cut up the cherry tomatoes and thown them in. Serve with a nice crustini or garlic bread! delish!!
Another veggie dish i like in the summer is to take zuchinni( chopped in smalish cubes) fresh tomatoes ( or you can use the canned diced, dosent really make much difference in the flavor) saute some onions and garlic and muchrooms ( fresh mushrooms work best here) in a bit of olive oil w/just like a teaspoonful of butter for a richer taste. While thats all sauteing till the zuchinni is just tender, fix some wild rice ( or cuscous or plain white rice if you prefer, i spose you could even use a smaller pasta , like the tiny bow ties, or the small pea-looking pasta ( looks almost like a fat rice, you can use whatever you like really, the taste is the same... altho i prefer the texture and the flavor of wild rice, even the instant!) When the rice is done, toss it all together, and top with a nice parmasiano regiano
You could also make a veggie lasagna. You use a white sauce rather than red sauce ( the jar alfredo sauce works just fine.) layer your lasagna noodles with diced carrots, some onion, fresh broccoli ( if you like it) you can also layer in some fresh spinishl Layer together like you would a regular lasagna... noodles, veggies, either mozzarellla or the parmasaino regiano, repeat. You can add in whatever veggies you perfer, and it turns out well every time. it also freezes well, to pull out of the freezer, and reheat ( covered with foil if in the oven, or plastic wrap in the microwave)
Then theres always the reliable grilled cheese ( unless you don't do dairy) Use a nice sourdough, or chibatta bread, or even a whole wheat) experiment with different sorts of cheeses, ( i like cheddar, swiss or combos of different cheeses you wouldnt think of for ';grilled cheese) I use a small spreading of cream cheese on one side of the bread, some really thinly sliced red onions, some spinich... Oh i'm hunngry just thinking about it. Just play around with all these recipes with ingredients your family likes. But these are easy, quick and in my opinion, delish!
