Vegetarian recipes?

Can anyone suggest some good vegetarian recipes and meals using tofu or soya for dinner? I'm new at this so any tips would be great!Vegetarian recipes?
Tofu Parmigiana





Original recipe yield:


4 servings

INGREDIENTS


1/2 cup seasoned bread crumbs


5 tablespoons grated Parmesan cheese


2 teaspoons dried oregano, divided


salt to taste


ground black pepper to taste


1 (12 ounce) package firm tofu


2 tablespoons olive oil


1 (8 ounce) can tomato sauce


1/2 teaspoon dried basil


1 clove garlic, minced


4 ounces shredded mozzarella cheese


DIRECTIONS


In a small bowl, combine bread crumbs, 2 tablespoons Parmesan cheese, 1 teaspoon oregano, salt, and black pepper.


Slice tofu into 1/4 inch thick slices, and place in bowl of cold water. One at a time, press tofu slices into crumb mixture, turning to coat all sides.


Heat oil in a medium skillet over medium heat. Cook tofu slices until crisp on one side. Drizzle with a bit more olive oil, turn, and brown on the other side.


Combine tomato sauce, basil, garlic, and remaining oregano. Place a thin layer of sauce in an 8 inch square baking pan. Arrange tofu slices in the pan. Spoon remaining sauce over tofu. Top with shredded mozzarella and remaining 3 tablespoons Parmesan.


Bake at 400 degrees F (205 degrees C) for 20 minutes.











Barbecue Tofu Sandwiches

INGREDIENTS


1/8 (12 ounce) package extra firm tofu


1-1/2 teaspoons vegetable oil


1/8 onion, thinly sliced


1/4 cup barbecue sauce


1 hamburger buns


DIRECTIONS


Drain the tofu between paper towels until most of the water has been squeezed out.


Slice tofu into 1/4 inch thick slices.


Heat vegetable oil in a large skillet, fry tofu strips until golden brown on both sides. Add onion and cook for a few minutes, until onion is at your desired consistency.


Pour in barbeque sauce (use more or less, according to your taste). Cook the mixture for ten minutes on low and serve on buns.








Vegetable Tofu Stir-fry





鈥?1 tbsp canola oil


鈥?1 carton (10.25 oz) extra-firm tofu, cut into 1/2-inch cubes


鈥?1 package (16 oz) frozen mixed vegetables


鈥?1/4 cup stir-fry sauce


鈥?4 cups cooked rice





Heat oil in large skillet or wok until hot. Add tofu and stir-fry for 3 minutes. Add frozen vegetables and sauce and stir-fry for 6 to 8 minutes until vegetable colors intensify. Serve immediately over rice. Serves 4.








Hearty Vegetarian Tofu Chili

1 medium onion, chopped


1 medium green pepper, chopped


2 garlic cloves, minced


1 teaspoon olive oil


16 ounces extra firm tofu, drained and crumbled


1 teaspoon cumin


1 teaspoon hot sauce


salt, to taste


pepper, to taste


1 (19 ounce) can red kidney beans, drained


1 (19 ounce) can white kidney beans, drained


1 (28 ounce) can diced tomatoes


1 (14 ounce) can tomato sauce


3 medium carrots, sliced


2 tablespoons chili powder





Saute first 4 in meduium heat.


Add tofu, cumin, hot sauce, and salt and pepper and saute until crisp and lightly browned (10 min).


Add rest of ingredients (beans, tomatoes, tomato sauce, carrots, and chili powder).


Boil, reduce heat and simmer 45 to 55 minutes








Tofu cakes





Ingredients


12 oz. of tofu


6 spring onions, chopped





2 tbsp chopped parsley


3 tbsp finely chopped walnuts


4 oz fine whole wheat breadcrumbs


2 tbsp grated Parmesan cheese


Salt and pepper


Oil for shallow frying





Method


Mix the tofu with the spring onions, parsley, nuts, breadcrumbs and parmesan.





Then knead by hand to bind together and season to taste.





Shape the mixture into eight round cakes.





Heat the oil for shallow frying and fry the cakes in batches until light golden brown, turning once.





Drain on kitchen paper and keep hot while frying the remainder.





Serve with a crisp salad.











TOFU PIZZA


Yield: 6 Servings





3 Pita Breads, Split


Into Six Rounds


1 1/2 c Tomato %26amp; Garlic Sauce,


Drained


1 lb Tofu, Pressed


1/2 lb Fresh Mushrooms Sliced


1/2 c Chopped Green Pepper


1 1/2 tb Grated Parmesan





Preheat Oven To 375 F.





Place Pita Bread Rounds On Cookie Sheet %26amp; Spread With Tomato %26amp; Garlic


Sauce. Crumble Tofu Over Each Pizza Crust. Top With Green Pepper %26amp;


Mushrooms. Sprinkle With Cheese. Bake 15 Min.

Tofu Burgers





Combine the following ingredients and mix well:





1 lb tofu


1/4 cup soy flour


2 TBS whole wheat flour


2 tsp paprika


1 tsp garlic powder


1/2 tsp black pepper


1/2 tsp ginger powder


3 TBS soy sauce


1 cup finely chopped onions


1 egg


1 1/2 cups rolled oats


1/2 cup finely grated carrots


1 TBS mustard





Form into patties and bake on low heat(about 250 degrees F) in oven. Depending on how thick you make them, they may bake for 2 hours or so. You can also fry these up in a pan. I usually make up a triple batch, bake them all and then freeze them.











Sesame Seed Tofu





Cut into 3/4 inch cubes or 1/4 inch thick slices:


2 lbs. of firm tofu





Marinate for 2 hours in a mixture of :


1/3 cup low sodium soy sauce


1/4 cup olive oil


1/4 trsp. garlic powder


1 Tbsp. ginger root, grated or 1/4 tsp. ginger (powder)


2 tsp. sugar





Roll in:


1 cup sesame seeds (ground in a blender)


2/3 cup flour Brown in olive oil


and serve with hot rice.











Fried Tofu


20 min 10 min prep





1 (350 g) package extra firm tofu


3 tablespoons tamari or soya sauce


1/4 cup Red Star nutritional yeast


1 teaspoon seasoning (EG Tony Chachere's, Mrs Dash or mix your own combination)


1 tablespoon olive oil, to lightly grease a skillet (or other veggie oil)











Tofu Cheesecake - vegan


Yield: 8 Servings





CRUST


5 c Finely ground granola


1/4 lb Soy margarine





FILLING


1 c Soymilk OR 1 c Dry Soyagen with 1 c Water


20 oz Tofu


1/2 c Dry fructose


1/2 c Refined soy oil


1 tb Vanilla extract


1 ts Almond extract


2 ts Arrowroot powder





TOPPING


3/4 c Apple juice concentrate


3 tb Arrowroot powder


6 c Fresh strawberries





Blend granola and margarine together in bowl. Spread in oiled pie plate and bake at 350F for 5 min. Blend filling ingredients in blender until smooth. Pour into pie crust. Bake at 350F for 20 min.


Mix 1/2 c of juice concentrate with arrowroot. Simmer strawberries with 1/4 c of juice concentrate. Add arrowroot mixture and simmer for 15 min more. Pour topping over cheesecake and cool before slicing.Vegetarian recipes?
Pad Thai (sunrise tofu recipe)





INGREDIENTS:





250 g uncooked vermicelli rice noodles


2 tsp (10 ml) sesame oil


2 cloves garlic, minced


1 red bell pepper, thinly sliced


2 large ripe tomatoes, diced


1 cup (250 ml) snow peas


425 g medium firm tofu, drained and cut into 1 inch cubes.


4 tbsp (50 ml) soy sauce


2 tbsp (30 ml) fresh limejuice 4 tbsp (50 ml) chopped cashews


4 green onions, finely chopped


1 cup (250 ml) fresh bean sprouts


4 tbsp (60 ml) fresh cilantro chopped


4 tbsp (50 ml) tamari soy sauce


2 tbsp (30 ml) fresh lime juice


4 tbsp (50 ml) Chopped peanuts


4 green onions, finely chopped


1 cup (250 ml) fresh bean sprouts


4 tbsp (60 ml) fresh cilantro chopped





DIRECTIONS:


In a large pot, bring 6 cups of water to a boil. Add the noodles and stir to separate them. Cook until tender, about 5 minutes. Drain and set aside. In a large wok or frying pan, heat the sesame oil and add the garlic and bell pepper and saut沤 for 3 minutes. Stir in the tomatoes, snow peas and tofu. Stir-fry for another 3-5 minutes until the snow peas are tender. Add the tamari soy sauce and limejuice and bring to a simmer. Stir and cook for another 3 minutes to allow flavours to mix. Stir in the cooked noodles and cilantro. Serve in bowls or plates and top with chopped peanuts, green onions and bean sprouts.

Just use tofu or soya to replace the meat. The ';ground'; soy crumbles are just like hamburger.
