I'd like to share this one - it's a starter.
For 4 people - you'll need
1 nice ripe avocado
1 tin of artichoke hearts
1 lime
Some paprika
Drain the artichoke hearts and cut lengthways. Put one or two on each halves on plate.
Shortly before you serve, halve the avocado, removing the stone. Peel and slice the flesh, divide between the plates and squeeze some fresh lime juice over it. Sprinkle with paprika, the mild kind works well but you can use the hot kind if your guests like hot spices.Does anyone have any gourmet vegetarian recipes they would like to share?
I buy these Curry cubes in the Oriental/Thai sections of my grocery store Cant think of the name of it, buts a green and gold package
boil some new potatoes to almost done. cut into bite size pieces if big.
this is what I like to put in there. you can adjust anything to your liking on the veggies
Green onions, white onions in large pieces, green pepper about half of it, 1/2 yellow pepper both peppers cut into slivers , snow peas,, shredded carrots
Prepare the curry in another dutch type pan. I use 3-4 cubes of the curry, in about 1-1 1/2 cups water depending on how much veggies I have and how thick I want it to be. you might have to taste and adjust.
After you have your gravy, put all the veggies in there and let simmer till the onions and peppers are soft.
You can eat it like it is, or serve it over rice, or hydrate the Thai type noodles. In a large bowl add enough HOT water to cover the noodles. about 5-6 minutes they should be hydrated

EDIT: if you have guest that eat meat, serve with sautee'd chicken tenderloins added
Lemon-Chive Orzo
1 box orzo
1 Tbs. olive oil
2 cloves garlic, peeled and chopped
1/4 cup chopped chives
1 lemon, zested and juiced
2 Tbs. chopped fresh mint
Prepare orzo according to package directions. In skillet over medium-high heat, cook oil 30 sec. Add garlic; cook 30 sec., or until golder=n.
In bowl, combine cooked orzo, cooked garlic mixture, chopped chives, 2 Tbs. lemon juice, 1 tsp. packed lemon zest and chopped fresh mint.
Season orzo mixture with salt and pepper, if desired.

Not sure whether my recipes can be of any helps, 99% of my recipes is also vegan, more towards Asian Vegetarians Cooking.
