VEGETARIAN CHICKPEA PATTIES
2 15-oz cans chickpeas
1 1/2 cups quick oats
3 cloves garlic, minced
1 tablespoon chopped parsley
garlic and onion powder, to taste (if desired)
pinch freshly ground black pepper
2 to 3 tablespoons vegetable oil
salt, to taste
Drain the chickpeas and reserve the liquid. In a food processor or blender, process the chickpeas with 1/2 cup reserved liquid. If the puree is dry, add more liquid, a tablespoon at a time, to achieve a smooth, thick paste.
Place the chickpea puree in a mixing bowl and add the remaining ingredients except the oil. Mix well, adding additional water or oats as necessary to make a mixture that keeps its shape. Shape into 8 patties.
In a heavy skillet, heat oil and fry patties until golden brown on each side, for a total of 20 minutes or so. Thinner patties will cook in less time.
VEGETARIAN NACHOS
1 bag Nacho Cheese Doritos
1 cup shredded Colby cheese
1 jar Pace Picante Sauce (chunky)
1 jar jalepenos
2 tbs. sour cream
1 small can black olives
Take about 20-25 chips and place onto a microwavable safe plate.
Spread 1 cup Colby cheese onto the Doritos. Do not add sour cream until after heated. Heat in the microwave for 30 seconds to 1 minute (depending on microwave).
Spread Pace Picante sauce on top of the melted cheese and Doritos. Garnish with 2 heaping tablespoons of sour cream, black olives, and jalepenos.
QUICK BROCCOLI VEGETARIAN ENTREE
1 bunch broccoli, cut into sm. flowerettes, trimming woody stock
1 can mushroom soup
6 oz. cooked egg noodles
7 x 9 inch casserole
Pam baking dish. Mix together cooked egg noodles, mushroom soup and raw broccoli. Microwave on high approximately 10 minutes. Glorify this with adding fresh mushrooms and cubed chicken-like white meatDoes anyone have any affordable vegetarian recipes?

never really thought about it before, but this would be considered vegetarian. In a decent sized skillet, chop some potatoes and carrots about 1 1/2 inch thick (use enough so one layer will pretty well cover the skillet surface). Add about 4-5 cloves of garlic, and pour olive oil over the top (you want it to be abut 1/4 inch deep on the bottom). Add some salt, a bunch of sage, and thyme and mix it all up. Then cover and place in a 275 degree oven for about 2-3 hours, or until the potatoes are fork tender, stirring occasionally.

prepare 6-8ounces of rice as per package instructions, while it is doing take a non-stick pan and add a tea spoon of oil and half a sliced onion , fry gently for a couple of minutes and add half a pack of Quorn pieces, give it another couple of minutes and then add half a small bag of petite pois or garedn peas if you like.Continue to heat until the peas are heated through but still sweet and then stir everything into the rice and serve with a splash of soy sauce. Serves two, virtually fat free and cheap besides being yummy and versatile...you can use mushrooms, tinned sliced carrots, prawns or chicken in the same way and omit the Quorn in place of mushrooms if you like.
Take a large sautee pan..one with a lid..and pour in half a cup..quarter of a pint... of hot water into which you have dissolved a vegetable stock cube follow this with layers of slcied potatoes,carrots, onions and a pinch of dried herbs and pepper; bring to the boil and then reduce to a simmer and cover with lit for fifteen minutes. The vegetables should be cooked by then but you can always give them a couple more minutes with the lid on. throw on a handful of grated cheese and either cover the pan again..off the heat.. and allow the cheese to melt, or keep the lid off and pop the pan into a hot oven or under a grill until the cheese turns golden.Serve on its own or with baked beans..it is a lot tastier than it sounds and another almost fat free and cheap dish.
Prepare the rice dish as in the first recipie and stuff it into sweet peppers that you have cut the tops out of and deseeded, arrange the peppers in a baking dish and drizzle over a very little oil then bake at 170 degrees for thirty minutes..or a little longer to taste. Serve on heaps of the left over rice mixture..warmed up or cold; or on a bed of thinly sliced and just wilted carrot..peel the carrots and use the peeler to slice them thinly unless you have a mandolin, then put them into a sautee pan with a teaspoon of butter or oil and a good pinch of black pepper,stir them over heat for four to five minutes.
