Post Punk Kitchen is great (as mentioned by another response)! Veg Cooking.com is a great site too -- I've found TONS on there that I love, and they have a lot of different categories to search by. Even vegetarian crockpot recipes that are really yummy and fun to try.
Vegan Yum Yum is a vegan cooking blog -- but they list a lot of different recipes, with step-by-step ways to make them (including pictures!). I just discovered this one and it seems great.
All Recipes.com has a category for vegetarians too. What I like about this site is that people write reviews, and suggestions on how to make it even better.
