I am looking for good vegetarian recipes.?

I am also looking for a vegetarian lasagna recipe as close to the real stuff as possible. What can I do to make it ';not watery'; Please send any of your best vegetarian recipes.I am looking for good vegetarian recipes.?
The best way to make a lasangna not watery is to not boil the noodles. I use a ';hot cheese'; mixture to pour over the vegetables, tomato sauce and noodles (uncooked). The hot cheese is a combination of milk, ricotta, mozerella and white pepper. I'll look for the recipe and modify my message if I can find it. It really is the best, and easiest veggie lasagne I've had. It's just delicious.I am looking for good vegetarian recipes.?

2 medium zucchini


3 medium yellow squash


1/2 green bell pepper


1/2 red bell pepper


2 medium carrots


3 medium sized red potatoes


1 red onion


3 tbsp ricotta cheese


1 box of Barilla lasagna shell (the one that you can cook without boiling)


1 bottle of pasta sauce


Seasoning:


4 tsp crushed red chilli pepper


2 tsp dried chives


2 tsp dried parsley


salt and pepper as needed





Dice all the vegetables. Drizzle some olive oil on them, sprinkle with the seasonings, cover with aluminum foil and bake for an hour at 350 degrees. When the vegetables are cooked, add the ricotta cheese. This will be your lasagna stuffing. Follow directions on the Barilla box for how to assemble the lasagna.





To make it not watery, just add a few bread crumbs to the sauce.

12 lasagna noodles


2 tablespoons olive oil


2 heads fresh broccoli, chopped


2 carrots, thinly sliced


1 large onion, chopped


2 green bell peppers, chopped


2 small zucchini, sliced


3 cloves garlic, minced


1/2 cup all-purpose flour


3 cups milk


3/4 cup Parmesan cheese, divided


1/2 teaspoon salt


1/2 teaspoon pepper


1 (10 ounce) package frozen chopped spinach, thawed


1 (8 ounce) container small curd cottage cheese


24 ounces ricotta cheese


2 1/2 cups shredded mozzarella cheese, divided

DIRECTIONS:


Preheat oven to 375 degrees F (190 degrees C). Grease a 9 x 13 inch casserole dish.


Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.


Heat oil in a large cast iron skillet over medium heat. When oil is hot add broccoli, carrots, onions, bell peppers, zucchini and garlic. Saute for 7 minutes; set aside.


Place flour in a medium saucepan and gradually whisk in milk until well blended. Bring to a boil over medium heat. Cook 5 minutes, or until thick, stirring constantly. Stir in 1/2 cup Parmesan cheese, salt and pepper; cook for 1 minute, stirring constantly. Remove from heat; stir in spinach. Reserve 1/2 cup spinach mixture. In a small bowl combine cottage and ricotta cheeses; stir well.


Spread about 1/2 cup of spinach mixture in the bottom of the prepared pan. Layer noodles, ricotta mixture, vegetables, spinach mixture and 2 cups mozzarella cheese, ending with noodles. Top with reserved spinach mixture, 1/2 cup mozzarella cheese and 1/4 cup parmesan cheese.


Bake in preheated oven for 35 minutes, or until lightly browned on top. Cool for approximately 10 minutes before serving.

This is an old Persian recipe:


1.at first chop 1 Kg of spinach, and Cook it in one glass of boiling water and after it was cooked squeeze it and let it be cold.


2.chop an onion, fry it, and add cold cooked spinach to the onions, and fry it well.


3. add some salt and spice to it, and let it be cold.


4. then add some yogurt to it and stir it.


5.the food should be served cold.

    I'm allergic to sea foods and dairies and I can't stand the taste of meats. I could eat eggs with no problem, and beans upset my stomach sometimes.     My personal fave, and way easy, is to make a veggie soup - basically whatever veggies you like, but I like carrots, celery, tomato chunks, potatoes and squash, with a whole grain like barley, brown rice or quinoa (keen-wa), and season however you like (I personally like a few cloves of chopped garlic and most of a bunch of chopped cilantro). This is somewhat Tex-Mex (regional Mexican variation, not true authentic Mexican food), but definitely tasty! Also, use less water to make it more hearty and less broth-y, if you want to feel fuller.Can someone suggest some good vegetarian recipes?

    (just a quick note on parmesan cheese or Parmagianno Reggiano (proper name), it is not even vegetarian because it is made with animal rennet so watch out for that if you use that recipe as well as watch out for it in pesto and that stuff in the green bottle with the krapt food logo on it is probably not too be trusted either probably not real or has loads of chemicals for shelf stability!)
    Ingredients


    1 9-oz. package frozen cut green beans


    1/2 of a 16-oz. package frozen cauliflower


    1 14.5-oz. can diced tomatoes with basil, garlic, and oregano


    1/2 cup chopped onion (1 medium)


    1/2 cup sliced celery (1 stalk)


    1/4 cup regular barley


    1 clove garlic, minced


    1/4 tsp. ground black pepper


    3 cups reduced-sodium chicken broth


    1-1/2 cups reduced-sodium vegetable juice


    1/4 cup purchased pesto (optional)


    Finely shredded Parmesean cheese (optional)

    2. Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours. If desired, top each serving with pesto and Parmesean cheese. Makes 6 to 8 side-dish servings.

    Chop all your vegetables,then put them all into a frying pan.Add the tomato sauce then the olive oil,the Worcestershire sauce,the soy sauce,and finally the Hot pepper sauce.


    Then fry for about 15 to 20 minutes.

    Bold Vegan Chili





    INGREDIENTS


    1 (12 ounce) package vegetarian burger crumbles


    3 (15.25 ounce) cans kidney beans


    1 large red onion, chopped


    4 stalks celery, diced

    that is a recipe for a regular chili and i use it as my base recipe. i like to use veggie crumbles in place of the meat, any kind of veggie ground meat will work. i also like to use half kidney beans and half black beans. once it is cooked i usually add about 8-12 ounces of cooked elbow macaroni and i stir in a bunch of cheddar cheese(however much you like) and i call it ';chili mac';. my family and my boyfriend LOVE this when i make it. i cook dinner at least once a week at my boyfriend's apartment and he has never once asked me to repeat a recipe(he is a very picky eater) and he has requested this 4 times! trust me it is a winner! enjoy!
    A tip - don't use runner beans.

    1. Start out using some basic substitutes for the meat you are used to in foods where you won't even notice - ground meat replacements are available in the frozen food sections.


    2. Leave meat off things that don't need it - pizza, salad, spag, etc.


    3. Get some good cookbooks when you are ready to branch into more interesting foods - Moosewood books and New Farm Vegetarian are two of my favorites.

    Actually, a pescetarian is not any sort of vegetarian because fish is meat. You are still an omnivore. Most of us in here dont know any fish recipes.

    Pasta shells and italian sauce with parma cheese over top.
    I eat pasta all the time. It's simple to make. Try using different types of noodles and vegetarian sauces (alfredo is wonderful, although it's terrible for you..). I also add mushrooms to basically EVERYTHING because it helps to add a little substance. I love anything by Morningstar Farms (they are frozen meat substituteS). Try their spicy black bean burgers, they're amazing. Make sure you take a multi-vitamin because by not eating meat, you lose a lot of nutrients. And be prepared to be awfully tired until your body gets used to having less protein.
    Buffalo tofu is super easy and delicious (slice tofu brown in a little bit of oil smother in buffalo sauce and then bake)


    Veggie burgers are handy

    Pasta with primavera or garlic and broccoli

    Ingredients:





    * 4 cups broccoli flowerets


    * 4 cups cauliflower flowerets

    Just because you've given up meat, doesn't mean that you have to give up big delicious breakfasts complete with sausage and eggs (ahem, imitation sausage and eggs). Fantastic Foods offers a mouth-watering tofu scramble that will definitely please any breakfast crew. Want to add a little oomph to that mix? Try this easy vegetarian recipe:








    1/2 cup grits





    1 cup water





    salt (optional)





    margarine or butter (optional)





    1 block of firm tofu, drained





    1 packet of Tofu Scrambler mix





    1 tablespoon yeast flakes (optional)











    Boil the water and add grits (this is also when you would add the margarine and salt). Simmer the mixture for five minutes. While the grits are cooking, saut茅 the tofu and the Scrambler mix together in accordance with the instructions. Add the grits to the fried mixture and saut茅 for some more.     Mix Vegetable Curry





    Ingredients:





    Carrots, potatoes, french beans (cut into tiny cubes) 2


    Canned corn 1/2 can


    Peas 1/2 pack (frozen)


    Onions(finely cut) 1 cup


    Tomatoes 2-3


    Cloves 2-3


    Cinnamon 1 stick


    Bay leaves 1-2


    Ginger-garlic paste 1 tsp


    Red chili powder 1 tsp.


    Turmeric Powder 1 tsp.


    Garam Masala Powder 1 tsp.


    Mustard seeds as required


    Cumin powder as required


    Vegetable oil 4 tbsp.


    Salt to taste


    Coriander leaves chopped





    Method:





    1. Make a paste of the tomatoes and 1/2 cup of onions in the blender.


    2. Boil all the vegetables in a pressure cooker and set aside.


    3. Heat oil in a pan.


    4. Fry mustard, jeera, and all the spices.


    5. Once mustard splatters, fry the onions till light brown.


    6. Add tomato-onion paste and saute until oil separates.


    7. Add turmeric powder, chilli powder, garam masala, cumin powder and salt.


    8. Add the vegetables and cook on low flame for 7 - 8 minutes.

    get buns, portepelo mushrooms, hard tofu(medium), a little of oil, and salad.sate the mushrooms(cook them). then put them aside hot. then cut the tofu's in 1 inches, and just sate them(and cook them) without moving them much. so they dont split. then put your lettus, tomato, on your bun with your mayo(or what u like) then put the mushrooms and tofus in the bun and there you got a sadwich.
    Red Lentil Dall:





    Put some red lentils on the boil 1 third coconut mild and 2 thirds water.





    Chop onions and fry them in a mixture of oil and butter OR in pure Ghee. And some crushed garlic to taste. And Whole spices (Star Anise, Cardomon,) meanwhile, quickly mix up a paste with a litle water and some Turmeric, Cumin, Ground Corriander, Chllies to taste, crushed lime leaves, Fenugreek and anything else you want. Chop one banana and add a little creamed coconut to the frying pan. Add the banana to the frying pan. Fry.


    Add a spoonful of honey (or to taste).





    When the lentils are cooked, and the stuff from the frying pan into the saucepan with the lentils. Stir in and cover. Leave (OFF the heat) for 5 minutes (this is to let the flavours blend together).





    Enjoy with bread (nan, chapathi, ordinary bread) and a cold glass of non-citrus fruit juice.

    Homemade Ice Cream





    Here's what you will need to make it:





    1 cup milk


    1 cup whipping cream


    1/2 cup sugar


    1/2 teaspoon vanilla


    salt


    large, 2-pound, 7-ounce coffee can with a plastic lid


    small, 1-pound coffee can with a plastic lid


    some ice





    Here's what you have to do:





    1. Wash your hands.





    2. First you'll need to freeze both of the coffee cans overnight.





    3. The next day, mix the milk, cream and sugar together in the small coffee can.





    4. Put the lid on and place it inside the larger can.





    5. Pack the ice into the larger can around the smaller can, and sprinkle with salt so that it makes your coffee can ice cream maker really cold.





    6. Put the lid on the larger coffee can and start rolling it. It takes a while so be patient.





    7. Replace the ice when it starts to melt and open up the can and scrape the mixture from the sides once in a while.

    1 avocado, ripe, peeled and diced


    1/2 bunch cilantro, finely diced


    1 large tomato diced


    1/2 cabbage, sliced and diced


    1/4 c diced celery


    1/2 brown onion, diced


    1 fresh jalapeno, seeds removed then diced


    Mayo


    salt/pepper to taste





    In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.


    Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well. Chill for 1 hour and serve cold





    JELLO DESSERT


    1 pkg large jello, any flavor

    Make the jello as on the package but use 1/2 cup less water.


    Add fresh fruit like fresh strawberries, grapes, chopped apples. Let it gel for 4-6 hours. Mix up the jello and add 1/4 tub of cool whip. Add more if desired. Mix well, and its like an ambrosia.





    Put the mix in a glass, and top with more fresh fruit or coolwhip.

    Something easy is Mexican food. Beans and rice, taco (instead of meat, use re-fried beans) and fill with lettuce, tomato, onion, some cilantro.





    Italian food is easy. Garlic bread (use margarine vs. butter) when making it. A nice salad with an oil and vinegar dressing. Pasta (I like the whole grain) with tomato sauce. You can add squash to the sauce (zucchini is traditional) along with some onion, maybe some parsley to make it pretty and add a nice taste.





    Oriental is another easy one, esp. if you have a rice cooker since most come with a steamer that you can put on top to steam veggies as you are cooking the rice. They have vegetarian egg rolls that you can buy at the store. Some sweet and sour sauce that you can buy at the grocery store to dip things in, soy sauce.





    Want something traditional all American, there are always the processed fake 'hamburger' or 'hot dog' that you can fix with some french fries, corn on the cob. Put on your toppings of choice, your good to go.





    Amy's Soy Mac-n-cheese, add Soy Knox or Smart Dogs.





    Amy's Indian food or Trader Joe's Indian Food (Dal) with rice.





    Hummus, pita bread and a salad.

    Clean portabello mushrooms, cut up, saute in olive oil, garlic and a little soy sauce. Serve with salad.





    Easy Corn Chowder Soup 鈥?1 can each of White Corn, Yellow Corn and Creamed Corn, including the water from the can. Cut up celery add to the pot, add a little rice dream milk.

    1/8 teaspoon red pepper flakes


    1/2 cup balsamic vinegar





    DIRECTIONS


    Slice the loaf of bread in half lengthwise. Layer the basil, tomato slices, and mozzarella cheese between the two halves of bread. Cut into four sandwiches.


    In a small dish, stir together the balsamic vinegar and red pepper flakes. Use as a dipping sauce.

    2.Stir in the curry paste, pour over the stock and coconut milk. Bring to the boil, then simmer for 10 mins or until the potato is tender. Stir through the coriander and serve with rice or naan bread.


    Olive oil-baked potatoes. 1.Heat oven to 200C/fan 180C/gas 6. Scrub the baking potatoes, then pat dry. Slice lengthways into three. Drizzle olive oil over a large baking sheet. Place the potatoes on the baking sheet, drizzle with olive oil, rub all over, then generously sprinkle with sea salt. Bake for 40-45 mins (longer for extra crispiness) turning halfway, until golden brown and tender.

    Vegetarian Lentil Soup Recipe








    INGREDIENTS:


    1 tsp vegetable oil


    1 onion, diced


    1 carrot sliced


    4 cups vegetable broth


    1 cup dry lentils


    1/4 tsp pepper


    1/4 tsp dried thyme


    2 bay leaves


    dash salt


    1 tbsp lemon juice








    PREPARATION:


    In a large pot, sautee the onions and carrot in the vegetable oil for 3-5 minutes until onions turn clear.


    Add the vegetable broth, lentils, pepper, thyme, bay leaves and salt.


    Reduce heat to a simmer. Cover and cook until lentils are soft, about 45 minutes. Remove bay leaves before serving.
    You can take the meat of just about any recipe and substitute.

    Tofu ';Egg'; Salad (passed the taste test with my neighbor who didn't even know that it wasn't really 'egg' salad)





    1 package of tofu extra firm or firm drained


    1 stalk of celery (more if you like more) chopped


    1/2 red bell pepper (sweeter than green and adds color) chopped


    onion (to taste) chopped


    1/4 cup of salad dressing (Miracle Whip will work)


    1/2 teaspoon of dijon mustard


    1/8 teaspoon of turmeric


    salt and pepper to taste





    Place the tofu in a bowl and mash till it resembles scrambled eggs. Stir in celery, red pepper, onions, salad dressing, mustard, turmeric, salt and pepper. Cover and refrigerate is your not going to eat it right away.





    (4 main dish servings - about 195 calories, 18g. protein, 10g carbohydrate, 11g total fat (1 gram saturated fat if you use real mayo), 0mg cholesterol)








    Spicy Peanut Noodles





    8oz linguine noodles


    1/3 cup peanut butter (smooth)


    1/4 cup of water


    1 1/2 tablespoons rice wine vinegar


    1 to 2 teaspoons chile paste with garlic


    1/2 teaspoon of sugar 2 tablespoons of soy sauce


    1 medium sized red bell pepper cut into thin strips


    3/4 cup chopped seeded cuccumber


    3 green onions sliced diagonally into 1/4 inch pieces


    2 tablespoons chopped cilantro





    Cook linguine according to package directions. Combine peanut butter, water, soy sauce, vinegar, chile paste and sugar in a large bowl and whisk until blended. If sauce doesn't have the consistency of cream, thin it with a little water. Add the linguine noodles, bell pepper, cucumber, and green onions. Toss well and sprinkle with cilantro.





    (234 cal. per serving 9g of protein, 8g of fat, 33g of carbs, 0mg chol., 270mg of sod., 3g of fiber)








    Rice Noodles with Many Herbs





    3 small carrots, peeled and cut into 2'; by 1/4'; matchstick strips (1 1/3 cups - can buy them pre cut in bags at many stores)


    1/3 cup seasoned rice vinegar


    1 package (1 pound) 1/2 inch wide flat rice noodles


    1/3 English (seedless) cucumber unpeeled and cut into 2'; by 1 1/4'; matchstick strips


    1 cup loosely packed fresh cilantro leaves


    1/2 cup loosely packed fresh mint leaves


    1/3 cup loosely packed small fresh basil leaves


    1/3 cup snipped fresh chives


    2 teaspoons Asian sesame oil





    In a small bowl stir carots with rice vinegar. Let stand at room temperature while preparing noodles.





    Heat 5 qts. of water to boiling over high heat. Add noodles and cook just until cooked through, about 3 minutes. Drain noodles, rinse under cold water and drain again.





    Transfer the noodles to a shallow serving bowl. Add the carrots with their liquid, cucumber, cilantro, mint, basil, chives, and sesame oil. Toss well.





    (470 cal. per serving 7g protein, 105g carb., 3g fat, ()g saturated), 0mg chol., 550mg sodium)








    Poblano Rigatoni





    1 package (16 oz) rigatoni pasta


    1 tablespoon olive oil


    3 poblano chilies cut into 1/2 inch strips


    1 small onion cut into 1/2 inch thick slices


    2 small zucchini (about 6 oz each) cut into 1/2 ubcg thick slices


    2 garlic cloves crushed with a press


    1/2 teaspoon dried oregano crumbled


    1 teaspoon salt


    1 pint grape or cherry tomatoes


    4 oz Montery Jack cheese cut into 1/2 inch pieces (if you do dairy)





    Cook pasta according to directions.


    In nonstick 12 inch skillet, heat oil over medium high het until hot. Add chiles and onion, cook until lightly charred and tender-crisp (about 7 minutes). Add zucchini and cover to cook 3 minutes. Add garlic, oregano, and salt. Cook 30 seconds. Stir in tomatoes and cover to cook until they are slightly softened.


    Drain pasta. Put in serving bowl to toss the pasta with vegetables and and cheese.





    I got lots more - Carrot and Apple soup that is really good - but this should help to give you something to pick thru, not to mention that I am tired of typing and going to bed.

    SAUTEED SPICY TOFU





    1 8oz pkg super firm tofu, drained


    2 cloves garlic, minced


    1 shallot, minced


    1 green onion, chopped


    2 large Chinese cabbage leaves


    1 tablespoon olive oil


    1 egg


    1 1/2 teaspoons ham soup base


    1/4 teaspoon Ortega meat taco seasoning





    Saute drained tofu cubes with green onion and shallot in olive oil over high heat, adding garlic after 4 minutes. Add thinly sliced shreds of chinese cabbage; stir fry until wilted. Add ham soup base and stir quickly and thoroughly until all cubes are well coated. Stir in 1/2 cup water and 1 teaspoon Wondra flour to thicken. When water begins to be absorbed, quickly stir in 1 egg; cook over low heat for about 1 minute or until egg is no longer liquid and has coated the cubes.


    Sprinkle with Taco seasoning, if desired, and serve.





    Note: Different quick-cooking greens may be substituted for the Chinese cabbage.








    ANKAKE TOFU





    19 oz. firm tofu (1 block)


    4 dried shitake mushrooms


    2 oz. snow peas


    1 med. size carrot


    2 tbsp. cornstarch


    A sheet of Kobu seaweed


    1 oz. Mominori seaweed





    DASHI (Broth) :


    2 tbsp. soy sauce


    1 tbsp. mirin


    1 tsp. salt


    4 c. water





    Boil 4 cups of water with Kobu seaweed and shitake mushrooms for 5 minutes. Take Kobu and shitake out and add soy sauce, salt and mirin. Simmer. Cut shitake mushrooms 1/4 inch width. Peel carrot and slice thinly 1 inch long. String snow peas. Cut 1 inch long. Cut tofu into 1/4th's and place into medium boiling water until it floats.


    Put 1 piece drained tofu into each bowl. Cook carrot in dashi broth and put shitake and peas, boil it for 1 minute. Dissolve cornstarch with 1/4 cup of cold water and slowly put into dashi broth. Serve broth with tofu and put mominori on top. Serves 4 persons.






    I love love love quinoa, and this recipe is so incredible! We eat it either as a side dish or a main course.





    Quinoa and Black Beans





    * 1 teaspoon vegetable oil


    * 1 onion, chopped


    * 3 cloves garlic, peeled and chopped


    * 3/4 cup uncooked quinoa


    * 1 1/2 cups vegetable broth


    * 1 teaspoon ground cumin


    * 1/4 teaspoon cayenne pepper


    * salt and pepper to taste


    * 1 cup frozen corn kernels


    * 2 (15 ounce) cans black beans, rinsed and drained


    * 1/2 cup chopped fresh cilantro


    * Fresh limes wedges


    * Diced avocado





    1. Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.


    2. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,


    3. Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.


    4. When serving, squeeze lime juice and top with diced avocado.

    boil 2- 2 1/2 cups of spiral noodles and out this sauce on them





    the sauce consists of 1/2 cup ranch dressing about 1.2 cup milk or water, a good dose of parmesean cheese and salad suupreme mixed together and put on low heat

    This is my all time favorite and satisfying meal.





    Tostadas





    Take a tostada shell and put on plate.





    Heat Vegetarian refried beans (no lard) and spread some on top of the shell. Sprinke cheese on and zap in microwave to melt the cheese and heat things up, not even a minute. Then add chopped lettuce, chopped tomatoes, green onions, then sour cream and then guacamole and then just a few more little sprinkles of cheese. Then eat it like a pizza





    It is so good. I had this yesterday. Yum.
    Here's an old recipe for a snack or light lunch. Mix a little margarine into some peanut butter. (It helps the texture.) Wash a stalk of celery and cut it into 6'; lengths. Don't plit it. Spread the pb into the groove on the celery. Dot with raisins. Enjoy.





    To make this portable, leave the raisins off and put two of these sticks pb side together. Wrap with plastic wrap. Take the raisins with you. Unwrap the celery sticks wherever you're going to have lunch, and add the raisins. For a lunch, you'll likely want more than two, but wrap them by twos and they'll stay neat.

    Hummus:





    Ingredients:


    2 cups canned chick peas, drained or the same amount fresh cooked


    2/3 cup tahini


    1/2 cup lemon juice


    2 cloves mashed garlic


    1 teaspoon salt


    1/4 teaspoon cumin


    parsley for garnish


    olive oil


    blend all ingredients





    bean burgers


    a can of chickpeas


    a small onion, chopped


    a clove of garlic, chopped


    1 tbsp of flour (whole wheat or white)


    1/2 tbsp of dried parsley


    desired amount of chili powder and paprika


    2 tbsp canola/olive oil





    mash chickpeas, and season with parsley/paprika/chili powder.


    chop onion/garlic and fry in 1 tbsp of canola until golden brown, mix in flour and stir (dont burn the flour) and again season with the parsley/chili powder/ paprika.


    put this mixture with the chickpeas and mash again.


    form this mixture into patties and fry in the other tbsp of canola oil

    I have a lower fat version of Hummus that is delicious. And you don't have to buy that jar of tahini that you otherwise don't use. Even my bf who is not a vegetarian loves this.





    I can chickpeas, drained


    3 tblsp lemon juice


    2 tsp soy sauce


    1 tblsp peanut butter


    1 tsp oil, any kind


    1 tsp ground cumin


    1/8 tsp cayenne or hot red pepper flakes


    1/8 tsp black pepper


    salt to taste (or leave it out)


    Put it all in a food processor. Add a bit of water to thin it as it processes. Finished. Eat.

    There are so many things. There are some free books too. I didn't think I was going to be able to quit either. I quit cold turkey though. Slowly stoppping meat is very bad because then you say well i want more and I'll quit tomorrow and then you never do .Peta has a lot of great tips too. Also what helped me to stop is going to www.youtube.com and typeing in slaughter house and watching the videos. If you can hold out long enough being a vegetarian then the next time you try meat it won't digest very well.

    Pur茅e all ingredients in a blender. Put on stovetop and heat while whisking until thickened, remove from heat, and let cool slightly. Get some slices of great French bread. Let it soak in the batter. Heat a skillet and add a touch more coconut shortening or margarine, then brown the soaked bread on each side. Serve with pure maple syrup.

    1/2 cup plain non-fat yogurt


    Bran Flakes

    1 cup fresh ripe strawberries


    1/8 teaspoon ground flaxseed


    1 dry vanilla twig





    Cut banana in half lengthwise; place in cereal bowl. Mix powdered almond to yogurt and mix. Top bananas with yogurt mixture, bran flakes and sliced strawberries. Add vanilla and sprinkle ground flaxseed.





    Flaxseed: good source of Omega 3


    Almonds: mono-unsaturated fats and protein


    Yogurt: natural prebiotics for healthy digestive system


    Banana: Potassium and Zinc

    In order to get the correct nutritional value I use the companion books,';Diet %26amp; Recipes for a Small Planet'; I can just thumb through it and get ideas for very fast and easy meals that I know are balanced.What are some good vegetarian recipes?
    One thing that might be good is hummus. There is a great variety in flavors and quality but it is great on a pita with sprouts or fresh spinach. Just find a flavor you like. It is garbanzo beans. A really good cooked sandwich is portabello mushrooms, the big ones coated with olive oil , salt and pepper and cooked in the oven for about 30 minutes. Makes great sandwiches.

    Ingredients:





    1/2 fresh grated wholesome carrot


    2 slices whole wheat bread


    1/2 sprig green onion chopped


    1/2 sprig fresh cilantro chopped

    1 teaspoon sweet mustard (optional)


    1 tablespoon hummus





    Directions:





    Spread the sweet mustard on one slice of the vegan bread. Spead the hummus on the other slice. Layer the wholesome carrot, cilantro, green onion, tomato, and lettuce on the vegan bread and enjoy! Bread is also good toasted.

    Fried 'Chicken' (from the VegCooking.com site)





    1 tsp. salt


    1/2 tsp. onion powder


    1 tsp. pepper


    1 tsp. garlic powder


    2 cups unbleached white flour


    4 Tbsp. nutritional yeast (optional)


    3 Tbsp. yellow mustard


    1/2 cup water


    2 Tbsp. baking powder


    1 lb. mock chicken (try Morningstar Farms Meal Starters Chik'n Strips)


    3 1/2 cups vegetable oil





    • Mix together the salt, onion powder, pepper, garlic powder, flour, and nutritional yeast in a deep bowl.


    • In a separate bowl, dilute the mustard with 1/2 cup water.


    • Add 1/3 cup of the flour mixture to the mustard mixture and stir. Add the baking powder to the dry flour mixture and mix.


    • Dip chunks of the mock chicken into the mustard batter, then drop each chunk into the flour mixture and coat with the desired amount of “crust.”


    • Fry the chunks in hot oil on medium-high heat in a large skillet or deep fryer until crispy and golden brown, turning as needed.

    My latest favorite recipes are black bean and masa harina cakes seasoned with chopped onion, garlic, salt, cumin, chili powder, and a pinch of cayenne, then fried till crispy brown and topped with chopped onions, red bell pepper, toms, olive, a squeeze of lime, but one could add some lettuce, curtido, avocado, etc.





    I've also discovered a lovely shredded carrot salad with curry and coconut milk. I don't usually like carrots much but this is a perfect blend. Another one I like is a Jamaican rice with coconut milk, black-eyed peas, spring onion and a bit of cayenne (or pepper of choice) for bite. Then there is a quinoa salad that includes diced toms, bell peppers, onions, a bit of flax oil, salt and pepper (but add veggies and even fruits of your choice). One of the best is fresh (not canned) chickpeas in a rustic pita with greens of your choice (arugula, spinach, etc), roasted or fried (till a bit crispy) delicata squash slices (could probably sub zucchini roasted for flavor -- not likely to get crisp) topped with tahini and red chili sauce. Or how about a falafel waffle?





    To get some new ideas and learn how to do Indian food correctly check out Vahrehvah (VahChef) on YouTube. He has many vegetarian recipes and is very respectful of the diet.

    SRI LANKAN CURRY COCONUT CARROT SALAD


    Ingredients:


    1 large onion, chopped


    2 Tbsp oil


    1/4 tsp black mustard seeds


    1/2 tsp cumin seeds


    a pinch of fenugreek seeds


    a handful of fresh curry leaves (if available)


    2-3 green chillies, chopped coarse and deseeded


    1 lb carrots shredded large and about 2 inches long


    1/2 tsp ground turmeric


    8 oz coconut milk


    salt





    Directions:


    Fry the onion in the oil for three minutes or so, then add the mustard, cumin, fenugreek seeds, curry leaves, green chillies and salt. Continue cooking until the onion is golden.





    Add the carrots and turmeric and cook for 2-3 minutes more at medium heat, stirring often.





    Add coconut milk, bringing to the boil then simmer, covered, for 10 minutes or until the carrots are just tender but still very firm. Season to taste. Serve at desired temperature whether hot, warm, or cold.

    BLACK BEAN CAKES


    Ingredients:


    2 cups cooked black beans


    1 Tbls oil (give or take)


    1 diced onion


    1 garlic clove, minced


    1/2 tsp ground cumin or to taste (I like more)


    1/2 tsp salt (I add a touch more after cooking if it needs it)


    Pinch of cayenne powder


    1/8 - 1/2 cup masa de harina (corn flour), as needed





    Directions:


    Heat some oil over medium heat in a small pan. Combine beans, onion, garlic, and seasonings in a bowl then mash (potato masher works well here but a fork is good too) until well combined (but still chunky beans). Add masa slowly, letting beans absorb it before adding more. Roll dough in the palm of your hand to test and add more masa if dough sticks till it keeps a ball shape (dough will likely still be tacky but you can add a dusting of masa to palm of hand for form cakes). Make 8 balls then flatten into cakes. Heat large skillet over medium heat and add 1 tablespoon or so of oil. Fry cakes till lightly browned on each side, maybe 3 to 5 minutes a side and serve. Top with diced tomatoes, onions, red pepper, avocado, and/or jalepeno. Add a lime slice to each plate.Vegetarian recipes?
    Hi honey - I often get fed up with the same old recipes, so I use the Ooh La Flung option - that is, open freezer, select veggie sausages, grill and cut up into small pieces, fry an onion and little garlic and herbs, add red and yellow pepper and sweetcorn and peas (Any any other veggies you fancy) empty and tin of chopped tomatoes into the pan and allow to simmer, whilst this is simmering, cook some pasta or rice (This works well with either) then add the sausages to the pan and then mix in the pasta, serve with a little garlic bread, reat for all the family. Enjoy :)

    Vegetable Fried Rice Recipe





    Serving Size: 6 Preparation Time: 0:20

    INGREDIENTS:


    1/4 cup light soy sauce


    3 tablespoons rice wine or dry sherry


    1/2 teaspoon salt


    6 tablespoons peanut oil


    2 eggs -- lightly beaten


    1 carrot -- in 1/2'; cubes


    1 red bell pepper -- in 1/2'; cubes


    1/2 cup frozen peas


    4 cups cold cooked rice








    DIRECTIONS:


    Combine the ingredients for the sauce in a small bowl. Mix to blend well and set aside.


    Place a small skillet over medium heat. When it begins to smoke, add 2 tablespoons of peanut oil and the lightly beaten eggs.





    Stir until the eggs are firm but moist. Transfer the eggs from the skillet to a small bowl and break them into small curds. Set aside.


    Bring 1 quart of water to a boil in a small saucepan.





    Add the carrot and boil 1 minute. Drain and rinse in cold water. Drain again and reserve.


    Place a wok over medium-high heat. When it begins to smoke, add the remaining 1/4 cup of peanut oil and the garlic. Stir briefly.





    Add the carrots, celery, red pepper, and peas. Stir-fry 1 minute. Stir in the rice and stir-fry 1 minute.





    Pour in the sauce and cook until the rice is heated through, about 5 minutes, stirring frequently. Serve hot.

    CHILLI BEAN SOUP





    Serves 3 to 4





    INGREDIENTS





    1 onion


    1 tablespoon of olive oil


    400g tin of tomatoes


    400g tin of red kidney beans


    1 teaspoon of chilli powder


    1 vegetable stock cube


    250ml of water





    SPECIAL EQUIPMENT





    Hand-held blender





    METHOD





    Peel the onion and chop it into tiny pieces.





    Put the oil into a saucepan on a medium heat. Add the onion. Fry the onion for about 5 minutes. Stir frequently to stop it sticking.





    Open the tin of tomatoes. Add the tomatoes to the pan. Open the tin of beans and drain off the liquid. Add the beans to the pan. Crumble the stock cube into the water and pour it into the pan. Mix thoroughly. Continue to cook for another 10 minutes.





    Blend to the desired consistency.





    Add the chilli. Continue to cook for another couple of minutes.





    ADDITIONS %26amp; ALTERNATIVES





    Remove some of the beans before blending and put them back in afterwards. Add 1 teaspoon of ground cumin at the same time as the chilli. Use other tinned beans, like borlotti, cannellini or mixed beans.





    TIPS





    If you are worried about any 鈥榮ide effects鈥?from the beans, add some parsley (either a tablespoon of dried parsley at the same time as the beans, or a small bunch of fresh parsley before blending), which is said to help with these.

    Veggie Stir Fry

    2 tablespoons virgin olive oil


    1 tablespoon butter


    2tablespoons soy sauce


    2cloves fresh garlic chopped


    salt and pepper to taste





    heat the oil and butter in fry pan, add potato first and onion and garlic salt and pepper. when potato is almost fully cooked throw in all the rest. stir until all the colors start to get darker, now I usually add a sliced avocado and a chunked cut mango!     Vegetarian Tortilla Stew





    INGREDIENTS


    1 (19 ounce) can green enchilada sauce


    1 1/2 cups water


    1 cube vegetable bouillon


    1/2 teaspoon garlic powder


    1/4 teaspoon chili powder


    1/4 teaspoon ground cumin


    1 (15 ounce) can pinto beans, drained and rinsed


    1/2 (16 ounce) can diced tomatoes


    1 cup frozen corn


    1/2 cup vegetarian chicken substitute, diced (optional)


    4 (6 inch) corn tortillas, torn into strips


    1 tablespoon chopped fresh cilantro


    salt and pepper to taste








    DIRECTIONS


    In a pot, mix the enchilada sauce and water. Dissolve the bouillon cube in the liquid, and season with garlic powder, chile powder, and cumin. Bring to a boil, and reduce heat to low. Mix in the beans, tomatoes, and corn. Simmer until heated through. Mix in vegetarian chicken and tortillas, and cook until heated through.     1/3 cup chopped celery


    1/3 cup chopped green pepper


    陆 cup walnuts


    陆 cup cashews


    陆 cup almonds


    1 戮 cups cooked brown rice


    1 陆 cups grated pepper jack cheese


    1 tablespoon sage


    陆 tablespoon thyme


    1 teaspoon basil


    陆 tablespoon salt

    1 small onion, diced


    1 teaspoon black pepper


    1 陆 cups Tomato Sauce (recipe follows)





    Grind nuts together. Combine ground nuts and rice. Add 1 cup grated cheese. Add spices and chopped vegetables. Add 陆 cup tomato sauce. Mix well.





    Preheat oven to 350掳.





    Mold ingredients into a greased loaf pan.





    Cover with aluminum foil and bake for 50 minutes. Uncover and top with remaining tomato sauce and cheese. Bake for 10 more minutes. Serve hot.





    Tomato Sauce


    1 small can tomato puree (8 ounces)


    录 cup oil or ghee


    1 teaspoon black pepper


    pinch of hing *OR* 1 tsp garlic powder


    1 teaspoon salt


    1 tablespoon basil leaves


    pinch of sugar





    In 1-quart saucepan add ghee. When hot add black pepper and hing. Quickly add tomato puree. Add 陆cup water, pinch of sugar, salt, and basil leaves. Cook on medium heat for 陆 hour, stirring often.

    1 medium eggplant, fresh


    1 pkg. frozen spinach


    1 pkg. lasagna noodles


    1 pkg. (pint, sm. one) low-fat cottage cheese


    1 jar Favorite meatless sauce


    1 sm. pkg. Mozzarella lite cheese


    Salt and pepper


    Several plump tomatoes


    Parsley flakes





    Defrost spinach, drain as much water out with a colander as possible. Cut eggplant in rounds thinly sliced, lay on paper towels and lightly salt, lay another paper towel on top and continue layering with eggplant rounds, salt, paper towel etc. Place a heavy pan on a cookie sheet on top of stack, let sit for at least 1/2 hour to 2 hours. Cook lasagna noodles until tender. Mix cottage cheese with spinach in a bowl, salt and pepper and season to taste. In a casserole pan, spread a light layer of sauce. Add layer of noodles, layer of eggplant, sauce, layer of cottage cheese, spinach mix, another layer of noodles and repeat process until pan is full or desired height achieved. Top with remaining Mozzarella cheese, tomato sauce and cover evenly with thinly sliced peeled tomatoes. Sprinkle on parsley flakes.


    Bake at 350 degrees for 45 to 60 minutes, until eggplant is soft and has changed a brown color.





    STUFFED PEPPERS VEGETARIAN





    6 med. green peppers


    2 c. cooked rice


    1 lg. egg, slightly beaten or 1/4 c. Eggbeaters


    1 c. chopped onion


    1 sm. can tomatoes or 1 (10 oz.) can Rotel tomatoes


    1 tbsp. vegetable oil


    1 c. bread crumbs or wheat germ


    1 1/4 c. grated Cheddar cheese





    Cut off tops of peppers and remove and discard seeds. Dice tops, discarding stems, and mix all ingredients, reserving 1/2 cup cheese. Stuff peppers and place in a round microwave casserole. Put extra filling around peppers. Peppers should fit tightly. Cover with plastic wrap, piercing 4-5 times for vents. Microwave on High 15 minutes. Sprinkle with reserved cheese. Cover; let stand 2-3 minutes. Then serve. This dish can be made ahead and frozen for later use. Do not cook until after thawed.





    VEGETARIAN CHILI SURPRISE





    1 c. dried kidney beans


    1 c. dried pinto beans


    1/2 c. dried black beans


    5 stalks celery and leaves, chopped


    1 lg. carrot, shredded


    3 lg. tomatoes, peeled and cubed


    1 lg. green pepper, chopped


    1 med. onion, chopped


    1/2 c. raisins


    2 cloves garlic, minced


    2 bay leaves


    2 tbsp. chili powder


    1/4 c. plus 2 tbsp. minced fresh parsley


    1 tsp. dried whole dillweed


    1 tsp. dried whole basil


    1 tsp. dried whole oregano


    1 tsp. ground cumin


    1 tsp. ground allspice


    1/4 tsp. freshly ground pepper


    1/4 tsp. hot sauce


    1/2 c. unsalted dry roasted cashews


    1/4 c. unsalted sunflower kernels


    Bean sprouts (optional)





    Sort and wash beans; place in large Dutch oven. Cover with water 2 inches above beans and soak overnight. Drain, cover with water, cover pot and bring to a boil; reduce heat and simmer for 1 hour. Add remaining ingredients, except cashews, sunflower kernels and bean sprouts.

    Heat olive oil in a large skillet over medium heat. Saute onion, bell pepper, zucchini, and yellow squash until onions are tender. Stir in the teriyaki sauce. When the vegetables are tender, stir in the cooked rice, soy sauce, garlic powder, salt and pepper. Simmer for 3 to 5 minutes.


    Place 1/4 of the rice and vegetables in each tortilla, and roll up.

    #1. ~Artichoke Soup~





    Ingredients:


    * 6 artichoke hearts (fresh, frozen, or jarred)*


    * 3 cloves garlic, chopped


    * 3 T butter


    * 1 potato, peeled (optional) and diced


    * 4 c vegetable stock


    * salt


    * pepper





    Directions::


    Heat butter over medium heat, and saut茅 the artichoke hearts and garlic, stirring frequently, until golden.





    Add potato and stock, bring to a boil, lower heat, cover, and simmer about 10 minutes, until the veggies are tender.





    Blend potato and artichokes with a little bit of the cooking liquid until smooth. Transfer back to the pan, season with salt and pepper, stir the pur茅e into the remaining liquid, and reheat. Serve immediately.





    Notes:


    *Fresh artichokes: pull off the leaves, trim out the hairy choke, and blanch for a minute or two in boiling water with 2 T of lemon juice.


    Frozen artichokes: thaw and drain well before using.


    Jarred artichokes: make sure they are just in water, not marinated.





    #2. ~ Arugula Salad~





    Ingredients:


    * 2 bunches arugula


    * 5-6 T vinaigrette (or just 2 T balsamic vinegar + 4 T olive


    oil)


    * salt


    * pepper


    * 录 c parmesan cheese, thinly sliced or coarsely grated


    * 录 c toasted* pine nuts





    Directions:


    Wash and thoroughly dry arugula, then place in bowl. Toss with vinaigrette, salt, and pepper, and transfer to salad plates.


    Top with cheese and nuts.





    Notes:


    *Toss the pine nuts with a tiny amount of oil and toast in a frying pan over medium-high heat, stirring constantly, until golden brown. If the pan starts to smoke, turn down the heat.





    #3. ~Deep-Dish Potato Pie~





    Ingredients:


    * 2 pie crusts


    * 2 pounds potatoes (about 6 medium), peeled (optional)


    and thinly sliced


    * 1 large onion, peeled and thinly sliced


    * 1 c sharp cheddar cheese, grated


    * 2 T fresh parsley, chopped


    * black pepper


    * 1 c whipping/heavy cream


    * 录 c cold butter, cut into small pieces





    Directions:


    Preheat oven to 400. Lightly oil pie plate.





    Roll out 1 pie crust and place in pie plate. Arrange layers of potatoes and onions, then top with cheese, parsley, and pepper. Pour cream on top and dot with butter. Roll out the other pie crust and arrange on top, sealing edges. Slice the crust in a few places to let out steam.





    Bake for 10 minutes, reduce oven to 350, and continue baking for 50 minutes. Poke potatoes with fork to see if they're done; if not, keep baking another 10 minutes and try again.





    Remove from oven and let sit for 5 minutes. Slice and serve.

    Stuffed Swiss Mushrooms


    鈥?12 large fresh mushrooms


    鈥?5 tablespoons butter, melted


    鈥?salt and pepper to taste


    鈥?1/4 cup butter


    鈥?1/2 cup chopped onions


    鈥?1 tablespoon all-purpose flour


    鈥?1/2 cup heavy cream


    鈥?1/4 cup chopped fresh parsley


    鈥?1/2 cup shredded Swiss cheese





    1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.


    2. Remove stems from mushrooms. Finely chop stems and set aside. Arrange caps hollow side up in the baking dish. Drizzle with 5 tablespoons melted butter, and salt and pepper to taste.


    3. Melt 1/4 cup butter in a medium saucepan over medium heat. Stir in the mushroom stems and onions, and cook 5 minutes, or until tender. Gradually blend in flour and heavy cream until smooth. Remove from heat. Mix in parsley.


    4. Generously stuff mushroom caps with the mixture. Top with Swiss cheese.


    5. Bake 15 to 20 minutes in the preheated oven, or until lightly browned.





    Swiss Mushroom Loaf


    鈥?1 (1 pound) loaf unsliced Italian bread


    鈥?8 ounces Swiss cheese, cubed


    鈥?1 cup sliced fresh mushrooms


    鈥?1/4 cup butter or margarine


    鈥?1 small onion, finely chopped


    鈥?1 1/2 teaspoons poppy seeds


    鈥?2 garlic cloves, minced


    鈥?1/2 teaspoon seasoned salt


    鈥?1/2 teaspoon ground mustard


    鈥?1/2 teaspoon lemon juice





    1. Cut bread diagonally into 1-in. slices to within 1 in. of bottom. Repeat cuts in opposite direction. Place cheese cubes and mushrooms in each slit. In a microwave-safe bowl, combine the remaining ingredients; cover and microwave on high for 2 minutes or until butter is melted. Spoon over bread. Wrap loaf in foil. Bake at 350 degrees F for 40 minutes or until cheese is melted.








    Sweet Eggplant Stew (Semur Terong)


    * 1 lb. eggplant


    * 4 Tbs. vegetable oil


    * 1 Tbs. shallots


    * 1 clove garlic, sliced


    * 陆 cup water


    * 1 Tbs. sweet soy sauce


    * 陆 tsp. pepper


    * 录 tsp. nutmeg


    * 1 tsp. vinegar


    * 陆 tsp. salt


    * 1 tsp. sugar





    Cut the unpeeled eggplant into 陆-inch-thick slices, and then cut the slices in half. Fry lightly in 2 Tbs. of oil for 2 minutes, or until light brown and softened. Set aside.





    Stir fry the shallots and garlic in the remaining oil until light brown. Add the water, sweet aoy sauce, pepper, nutmeg, vinegar, salt and sugar. Let all of these ingredients cook for approximately 3 minutes to prepare the sauce.





    Cook the eggplant slices in the sauce for additional 2 minutes to distribute the flavors. Shake the pan several times to mix but not mash the eggplant. Serve hot or at room temperature.

    鈥?3 tablespoons butter


    鈥?1 large onion, chopped


    鈥?3/4 pound portobello mushrooms, sliced


    鈥?1 1/2 cups vegetable broth


    鈥?1 cup sour cream


    鈥?3 tablespoons all-purpose flour


    鈥?1/4 cup chopped fresh parsley


    鈥?8 ounces dried egg noodles


    1. Bring a large pot of lightly salted water to a boil. Add egg noodles, and cook until al dente, about 7 minutes. Remove from heat, drain, and set aside.


    2. At the same time, melt butter in a large heavy skillet over medium heat. Add onion, and cook, stirring until softened. Turn the heat up to medium-high, and add sliced mushrooms. Cook until the mushrooms are limp and browned. Remove to a bowl, and set aside.


    3. In the same skillet, stir in vegetable broth, being sure to stir in any browned bits off the bottom of the pan. Bring to a boil, and cook until the mixture has reduced by 1/3. Reduce heat to low, and return the mushrooms and onion to the skillet.


    4. Remove the pan from the heat, stir together the sour cream and flour; then blend into the mushrooms. Return the skillet to the burner, and continue cooking over low heat, just until the sauce thickens. Stir in the parsley, and season to taste with salt and pepper. Serve over cooked egg noodles





    *suggestions-- add garlic a bit of worstershire sauce
    VEGETARIAN STUFFED SHELLS





    1 (19 oz.) chick peas, rinsed and drained


    2 lg. eggs


    1 med. size onion or 3 long green onions, cut in chunks


    1 (15 oz.) container ricotta cheese, about 2 c.


    1 (10 oz.) box frozen chopped Kale (spinach) thawed and squeezed dry


    1/2 c. grated Parmesan cheese


    1/4 tsp. ground nutmeg


    36 jumbo sized pasta shells (8 oz.) freshly cooked and drained





    Process chick peas and eggs in blender/food processor until smooth. Turn off machine and add remaining ingredients except pasta. Process until onion is finely chopped and mixture is well blended. Spoon 2 tablespoons of mixture into each shell.


    To bake: Allow about 1/2 cup marinara sauce from a jar for 3 shells. Spread half of the sauce in the bottom of baking dish. Place shells on top in single layer, then spoon remaining sauce over them. Bake uncovered until center of filling is hot when tested with a fork and sauce is bubbling. To freeze before baking, arrange on lined pan and freeze, uncovered. Once hard, they can be stacked and stored airtight up to 3 months.

    Root veggie pot pie:





    3 tablespoons olive oil


    3 cups potatoes, cubed


    2 cups turnips, cubed


    1 cup parsnips, cubed


    2 cups carrots, chopped


    1/2 tablespoon fresh ginger, grated


    5 cloves garlic, diced


    3/4 tablespoon coarse sea salt


    1/2 cup apple juice


    1 teaspoon each rosemary and sage


    1 tablespoon tamari


    1 tablespoon cornstarch or arrowroot powder


    1/2 cup water


    2 cups kale, stems removed and finely chopped





    Topping


    2 cups flour


    3 teaspoons baking powder


    1/2 teaspoon salt


    1/2 cup olive oil


    1/2 cup rice milk


    1 teaspoon apple cider vinegar





    1. Place a large pot on medium heat. Place the oil in the pot and add the potatoes, turnips, rutabagas, carrots, ginger, garlic, salt, apple juice, and herbs. Stir ingredients frequently to prevent them from sticking to the bottom of the pot. As the vegetables are cooking, mix the tamari, cornstarch and water in a separate cup, stirring until the powder is dissolved. Pour this mixture into the vegetable pot and continue stirring. Cook the vegetables on medium heat for about half an hour, until they begin to soften.


    2. Preheat oven to 350F. While the vegetables are cooking, make the topping: In a medium-sized mixing bowl, stir in the flour, salt, and baking powder together. Make a well in the center of the flour mixture and slowly add the oil, vinegar, and water. Carefully mix the wet ingredients together in the well until they are emulsified, then stir them into the flour mixture until a soft dough is formed. Set aside.


    3. After the vegetables have begun to soften, pour them into a large casserole dish. Crumble chunks of the dough over the top, covering the top evenly with the dough. Place in preheated oven and bake 20-25 minutes, until the dough turns a golden brown. Serve warm.


    Serves 6 to 8.
