Does anybody have any good vegetarian recipes that are simple?

I recently quit eating meat. I became a Lacto-Ovo Vegetarian, the kind that still eats eggs and dairy products. I really need some good recipes that I could try. Help me out!Does anybody have any good vegetarian recipes that are simple?
I too am lacto-ovo who recently converted to vegetarianism. I am loving it! Here are a couple of the best and easiest recipes I have found so far...





Spinach and Feta Pasta (super simple)





1 pkg penne pasta


olive oil


1/2 c chopped onion


2 cloves garlic


3 c chopped tomato


1 c mushroom


2 c fresh spinach


salt and pepper to taste


1 pinch of red pepper flakes


1 4 oz pkg of feta cheese





Cook pasta until al dente. Meanwhile, heat 1 tbsp olive oil in a large skillet over med high heat. Add onion and garlic. Cook 5 minutes. Mix in tomato, mushroom and spinach. Season with salt, pepper, and red pepper. Cook 2 more minutes until spinach is wilted. Reduce heat to medium and stir in feta and pasta. Cook a couple more minutes til heated through.

Sweet Potato and Black Bean Enchiladas





10 corn tortillas


1 14 oz can black beans


1 14 oz can sweet potatoes


1 yellow onion


2 seeded and diced jalepenos


2 cloves minced garlic


1 tsp each cumin, chile powder, coriander and black pepper


1 shredded carrot


1 can salsa verde or mild enchilada sauce


1 1/2 c jack cheese





Mash sweet potatoes in a large bowl with a fork or potato masher. Add 1/2 c jack cheese, spices, jalepenos, carrot, and beans. Saute onion and garlic for 5 minutes then add to sweet potato mixture. Stir all ingredients. Put a little sauce in the bottom of a 9x13'; dish. Nuke the corn tortillas for 10 seconds each in microwave so they don't break. Roll up a little of the sweet potato mixture in each tortilla and place seam side down in dish. Pour remaining sauce and cheese over the top and bake in a preheated 375 degree oven for 30 minutes. YUM!

My favorite vegetarian cookbook is called, Moosewood Restaurant's ';Simple Suppers';. Great easy recipes. Fish is included as well.
My simplest recipe, both vegetarian and non-vegetarian, is to use a half can of coconut milk as a simmering sauce base, to which I add desired flavorings and food items.





For example, todays lunch was tempeh cubes and sliced carrots simmered in saffron-curry-habanero coconut milk, and served over a bed of romaine lettuce tossed with the juice of one lime.

very simple to wrap asparagus minced garlic and olive oil in foil and roast in oven
