Help me think of new things to make for my boyfriend. He is a meat eater, but i dont like preparing meat!Vegetarian recipes that a picky meat eater would love?
I made a three bean chili last week. All it had was a couple cans of tomatos, pinto, black, and kidney beans, a can of rotel and some spices. I threw it in my slow cooker and served it with some sour cream and Fritos.
My fiance was so convinced that it was going to be ';missing'; something. He was going to add some Boca (which I can't stand) or he wanted me to add some meat to ';his'; part of the chili (obviously not going to fly). I told him he had to try it the way I made it first and he loved it! I'm definitely going to make it more often.Vegetarian recipes that a picky meat eater would love?
Pizza-loaded with onions, peppers, mushrooms, black olives
Chili- I make a great one with the gimme lean sausage and beef type crumbles- one of each, cook a large onion in some oil, add the crumbles, 2 cans of chili beans, 1 can diced tomatoes with peppers, chili powder to taste- you can change this up with canned corn, black beans, green peppers, tomato paste, etc. Use leftover chili to make this veggie version of Emeril's Kickin Chili Pie
Ingredients
4 cups leftover Kickin' Chili, or your favorite chili
2 cups warmed veggie broth
2 cups milk
Salt
1 1/2 cups yellow cornmeal
4 tablespoons butter, divided
1 cup cooked corn kernels, drained
1 cup grated Cheddar
4 tablespoons grated Parmesan
Directions
Heat the leftover chili in a saucepan until warm. Cover, remove from the heat, and keep warm.
In a large saucepan whisk together the veggie broth, milk, salt, and cornmeal and bring to a boil over medium-high heat, whisking frequently. Reduce heat to medium-low and simmer, whisking occasionally, until thick and smooth, 6 to 8 minutes. Remove from the heat and stir in 3 tablespoons of the butter.
Preheat the oven to 375 degrees F. Butter a shallow 2 quart casserole with the remaining tablespoon of butter. Spoon 1/3 of the cornmeal mixture evenly over the bottom of the casserole, then top with the warm chili. Sprinkle the corn over the top of the chili, then spoon the remaining cornmeal mixture evenly over the top of the casserole. Sprinkle with the Cheddar, then top with the Parmesan. Bake until filling bubbles around edges and top is golden, 20 to 25 minutes. Serve hot.

Also how about eggplant parmesan, a side of spaghetti, a greek salad and some garlic bread. Yum.
My bf is a huge meat lover too and I am not so much. Try italian food, pastas and tomato sauces, or cheese stuffed canelloni (spelling sorry), my bf likes rice with tikki masala sauce as well.

I make my meat-eating boyfriend quesadillas (tortilla, cheddar, pepper jack, salsa, fake steak, and guacamole) ';tortilla soup'; (corn, black beans, tomatoes, taco seasoning, fake ground beef topped with tortilla chips) spaghetti (spaghetti topped with parmesan cheese, garlic, and olive oil) cheese lasagna (self-explanatory) falafel (with pitas and ranch sauce [sounds gross, but it's good]) and lots of pasta dishes. Hamburger Helper made with MorningStar crumbles is a huge hit at our house. I also make him plenty of cheesecake, cookies, and muffins. He's a happy camper! He never even complains about not having meat.
If he wants chicken nuggets for lunch, that's cool with me... I just make sure I have a quick rice dish or meal for myself.

i'm a vegan who has a meat eating wife.. i just cook here what is good and the usual.
so i do two things.. meat and soy.... let us get the meat out of the way... because it's the way life is... folks want meat, generally.... thus:
tonight it's bbq chicken with bbq baked beans that are going to be roasted along with the chicken... mashed potatoes... asparagus, and salad with avocados!
along with an ice cream sunday full of nuts, nanners, strawberries...
good fiber in that vegetable stuff.
and a fruit smoothie (with a tad of rum in it) :D
tomorrow i'll make her spaghetti with my giant meatballs... it'll have mushrooms, peppers and onions... then garlic.. all healthy chunks of it all fresh!
with fresh baked bread that's been transferred into garlic bread.
chicken is always nice to work with.. it's not fussy, you can do almost anything with it and a meat eater will chow down on it and it's one of the lower cholesterol items.
the animal is dead anyways... can't let the poor thing go to waste after all the hell it went through to become delicious.
that's how i approach it.. i can't lay my lips on the junk for several reasons.. mostly for health.. me and meat can't get along.. so i gave up.
then my wife.. had developed a taste for tofu and soy products...
that's a plus.
i make a killer avocado dip with that crappy morningstar bacon strips.

then boca has crumbled soy ground burger/meat... i use that with gently steamed then roasted broccoli... vegan (or pretends to be vegan) corn chips.. roast that all together til the chips start to get chewy.. then topple with some sour cream.. (vegan if so wanted) and that's very simple and filling...
then there's a crumbled soymeat (boca again) where you can steam peppers.. (red, green, orange, yellow) and get some tortillas... wrap that all together with a mince of chives and sour cream....
that'll shut them up and keep them healthy.. in a way.
always serve booze... beer or champagne.. they won't complain!
preparing meat for me was something i could not get out of.. when i'm with the meat i talk with it.. i make my peace with it... and praise it thanking it for it's sacrafices..... and i'm sorry it had to go through such hell in order to plentify our tables.
i know.. i'm nuts... so what!

just practice.... i get very in touch with the animal flesh when i'm with it... sometimes spiritual.. may be the cherokee part in me.. who knows.
sometimes it makes some of the meat eaters go.. now when ya go to think about it.... yeh.. it is a rotten thing to put those creatures through, just to fill our bellies...

Pasta is heavy and filling so how about baked lasagna full of vegetables, cheese and made with a hearty rich tomato sauce.
Served with warm crusty garlic bread.
Very easy to make at home and very satisfying.
(i.e.) tomato pasta sauce, fresh parsley, fresh basil, spinach, butternut pumpkin, zucchini, sweet potato, fresh ricotta, grated parmesan cheese. The list is endless.

Some are vegan but they have great recipes and really simple ones, also if you tell us what does he like the most i can recommend a specific one. I would say that you make him some pasta with tomato sauce, but to the sauce add some veggies like mushrooms, carrots, onions, and whatever you or he likes, if you think he would eat that tell me and i'll tell you the recipe.
Cheese pizza. Its a lovely compromise. It doesn't have the vegetables the meat eat wouldn't want to eat and it doesn't have the meat the vegetarian doesn't wanna eat...Unless you're vegan
