I have been vegetarian for a little longer than 6 months and I've actually GAINED a lot of weigh since then. I find it incredibly hard to find/make healthy vegetarian meals that don't cost 5x as much as chicken nuggets and the shopping market. Make Vegetarian Meatballs
Things You鈥檒l Need:
1/2 cup chopped walnuts
1 tsp salt
1 cup dried breadcrumbs (wholewheat are best)
1 tsp mixed herbs seasoning
1/2 cup cracker crumbs
5 eggs
1/2 cup grated cheese
1 clove garlic
SAUCE:
1 onion, finely chopped
1 can pineapple pieces and juice
1/2 cup water
2 tsp lemon juice
1/2 cup brown sugar
1 cup tomato ketchup
2 tbsps cornstarch
Step 1:
Make the vegetarian meatballs. Mix all of the ingredients together in a bowl. Fry the balls in olive oil or similar quality oil. Set aside to cool. If you would like to use them at this step, feel free to go ahead and substitute meatballs in a different recipe. For a complete meal on its own, follow the sauce recipe next.
Step 2:
Make the sauce. Saut茅 the onion. Add the pineapple pieces and juice. Add water, lemon juice, brown sugar and ketchup.
Step 3:
Dilute the cornstarch with water.
Step 4:
Bring the sauce to a boil. Add the diluted cornstarch and stir quickly until the cornstarch becomes clear.
Step 5:
Arrange the vegetarian meatballs in an ovenproof dish. Pour the sauce over the meatballs.
Step 6:
Bake for 30 minutes in a medium oven.
VEGETARIAN SPRING ROLLS
20 sheets spring roll wrappers
2 carrots
1 white cabbage
1 cup dry flavoured soy mince
300 g beansprouts
salt pepper
oil for frying
for dip:
soy sauce
white vinegar
Shred carrots and cabbage. Add beansprouts. Soak soy in a little bit of water untill damp. Add soy to mixture; salt and pepper to taste.
Wrap into spring roll sheets and then fry in oil.
Delicious with a soy sauce and white vinegar dip.

lattice vegetable casserole
16 ounces of california frozen vegetable mix
1 cup milk
1 (8.5) ounce can of french onions
1 tube of crescent rolls
1/2 tsp salt
1 can (10.5) ounces of cream of potato soup
1 cup of shredded cheddar cheese
Mix everything together except the crescent rolls. Grease 13 by 9 baking dish. Put mix into dish. Unroll the crescent doll and cut into 1/2 inch strips. Lay it over the mix lattice style to make it look nice. (its really easy) then bake at 375 for 35-40 min or until golden brown. Some people can add chicken but you dont have to if you are a vegitarian. its awesome I just had it for dinner!
im a vegetarian too and i suggest buying some of those protein smoothies cuz they last awhile.
