Has anyone got any ideas for some nice, delicious but easy vegetarian meal ideas. You know when you get bored of the same old stuff, I just want something a bit different. Doesn't have to be fancy :0)

Check out the blogs. There are so many great veggie blogs these days with so many great ideas that it is nearly impossible to get bored even if you're not a vegetarian or even if you have special diet needs such as gluten-free, dairy-free, soy-free, etc. There seems to be a blog for everyone with some great recipes and inspiring ideas.

My latest favorite recipes are black bean and masa harina cakes seasoned with chopped onion, garlic, salt, cumin, chili powder, and a pinch of cayenne, then fried till crispy brown and topped with chopped onions, red bell pepper, toms, olive, a squeeze of lime, but one could add some lettuce, curtido, avocado, etc.
I've also discovered a lovely shredded carrot salad with curry and coconut milk. I don't usually like carrots much but this is a perfect blend. Another one I like is a Jamaican rice with coconut milk, black-eyed peas, spring onion and a bit of cayenne (or pepper of choice) for bite. Then there is a quinoa salad that includes diced toms, bell peppers, onions, a bit of flax oil, salt and pepper (but add veggies and even fruits of your choice). One of the best is fresh (not canned) chickpeas in a rustic pita with greens of your choice (arugula, spinach, etc), roasted or fried (till a bit crispy) delicata squash slices (could probably sub zucchini roasted for flavor -- not likely to get crisp) topped with tahini and red chili sauce. Or how about a falafel waffle?

SRI LANKAN CURRY COCONUT CARROT SALAD
Ingredients:
1 large onion, chopped
2 Tbsp oil
1/4 tsp black mustard seeds
1/2 tsp cumin seeds
a pinch of fenugreek seeds
a handful of fresh curry leaves (if available)
2-3 green chillies, chopped coarse and deseeded
1 lb carrots shredded large and about 2 inches long
1/2 tsp ground turmeric
8 oz coconut milk
salt
Directions:
Fry the onion in the oil for three minutes or so, then add the mustard, cumin, fenugreek seeds, curry leaves, green chillies and salt. Continue cooking until the onion is golden.
Add the carrots and turmeric and cook for 2-3 minutes more at medium heat, stirring often.
Add coconut milk, bringing to the boil then simmer, covered, for 10 minutes or until the carrots are just tender but still very firm. Season to taste. Serve at desired temperature whether hot, warm, or cold.

BLACK BEAN CAKES
Ingredients:
2 cups cooked black beans
1 Tbls oil (give or take)
1 diced onion
1 garlic clove, minced
1/2 tsp ground cumin or to taste (I like more)
1/2 tsp salt (I add a touch more after cooking if it needs it)
Pinch of cayenne powder
1/8 - 1/2 cup masa de harina (corn flour), as needed
Directions:
Heat some oil over medium heat in a small pan. Combine beans, onion, garlic, and seasonings in a bowl then mash (potato masher works well here but a fork is good too) until well combined (but still chunky beans). Add masa slowly, letting beans absorb it before adding more. Roll dough in the palm of your hand to test and add more masa if dough sticks till it keeps a ball shape (dough will likely still be tacky but you can add a dusting of masa to palm of hand for form cakes). Make 8 balls then flatten into cakes. Heat large skillet over medium heat and add 1 tablespoon or so of oil. Fry cakes till lightly browned on each side, maybe 3 to 5 minutes a side and serve. Top with diced tomatoes, onions, red pepper, avocado, and/or jalepeno. Add a lime slice to each plate.Vegetarian recipes?
Hi honey - I often get fed up with the same old recipes, so I use the Ooh La Flung option - that is, open freezer, select veggie sausages, grill and cut up into small pieces, fry an onion and little garlic and herbs, add red and yellow pepper and sweetcorn and peas (Any any other veggies you fancy) empty and tin of chopped tomatoes into the pan and allow to simmer, whilst this is simmering, cook some pasta or rice (This works well with either) then add the sausages to the pan and then mix in the pasta, serve with a little garlic bread, reat for all the family. Enjoy :)

I would make a stir fry? i's easy and fun to make? think of all the different veggies you can use? it's endless?

it's endless? also add your favourite type of fresh noodles? and fry in a wok with some oil? (make sure the oil is really hot before ading the veggies then add the noodles last because they only really need warming?
to make it more interesting go to the supermarket and you will see loads of different stir fry sauces that yo can add to your stir fry? black bean sauce, soy sauce, plum sauce, sweet and sour sauce, chinese sauce and so on? also dont forget to add salt and pepper?

Vegetable Fried Rice Recipe
Serving Size: 6 Preparation Time: 0:20
Categories: Cereals/Grains Chinese Dishes Vegetables
INGREDIENTS:
1/4 cup light soy sauce
3 tablespoons rice wine or dry sherry
1/2 teaspoon salt
6 tablespoons peanut oil
2 eggs -- lightly beaten
1 carrot -- in 1/2'; cubes
1 red bell pepper -- in 1/2'; cubes
1/2 cup frozen peas
4 cups cold cooked rice
DIRECTIONS:
Combine the ingredients for the sauce in a small bowl. Mix to blend well and set aside.
Place a small skillet over medium heat. When it begins to smoke, add 2 tablespoons of peanut oil and the lightly beaten eggs.
Stir until the eggs are firm but moist. Transfer the eggs from the skillet to a small bowl and break them into small curds. Set aside.
Bring 1 quart of water to a boil in a small saucepan.
Add the carrot and boil 1 minute. Drain and rinse in cold water. Drain again and reserve.
Place a wok over medium-high heat. When it begins to smoke, add the remaining 1/4 cup of peanut oil and the garlic. Stir briefly.
Add the carrots, celery, red pepper, and peas. Stir-fry 1 minute. Stir in the rice and stir-fry 1 minute.
Pour in the sauce and cook until the rice is heated through, about 5 minutes, stirring frequently. Serve hot.
This one's fun.
CHILLI BEAN SOUP
Serves 3 to 4
INGREDIENTS
1 onion
1 tablespoon of olive oil
400g tin of tomatoes
400g tin of red kidney beans
1 teaspoon of chilli powder
1 vegetable stock cube
250ml of water
SPECIAL EQUIPMENT
Hand-held blender
METHOD
Peel the onion and chop it into tiny pieces.
Put the oil into a saucepan on a medium heat. Add the onion. Fry the onion for about 5 minutes. Stir frequently to stop it sticking.
Open the tin of tomatoes. Add the tomatoes to the pan. Open the tin of beans and drain off the liquid. Add the beans to the pan. Crumble the stock cube into the water and pour it into the pan. Mix thoroughly. Continue to cook for another 10 minutes.
Blend to the desired consistency.
Add the chilli. Continue to cook for another couple of minutes.
ADDITIONS %26amp; ALTERNATIVES
Remove some of the beans before blending and put them back in afterwards. Add 1 teaspoon of ground cumin at the same time as the chilli. Use other tinned beans, like borlotti, cannellini or mixed beans.
TIPS
If you are worried about any 鈥榮ide effects鈥?from the beans, add some parsley (either a tablespoon of dried parsley at the same time as the beans, or a small bunch of fresh parsley before blending), which is said to help with these.

I'm sure if no-one can think of anything your best bet would b to look on google for quick and easy recipes for vegetarians. you could try making vegetable cakes, (like fish cakes but without the fish) or you could make a vegetable omelet. or try this website www.vegcooking.com
Meatless meatloaf.
mix 2 cups of cooked lentils, 1 can of tomato puree, 1 cup of oatmeal(porridge oats), 2 grated carrots, 1 red onion, 1 clove of garlic, season as you like (I use salt, basil and oregano). Put in a loaf tin and cook for an hour at gas mark 5 or 180f
