Does anyone have any good vegetarian recipes?

www.vegetarian.allrecipes.com, it lists every recipe by vegetable and has everything from appetizers to desserts. It's fantastic!Does anyone have any good vegetarian recipes?

paneer-mutter, that is paneer with green peas, in masala.


get the paneer slab , 250 grams, from an indian store,cut in squre, but thinner cubes, stir-fry golden, keep aside.


cut onions, two small, make tomato puree, cut green chilies.


in a wok, heat oil, fry onions, put puree, and chillies slit-cu, stir. add some red chilli powder, turmeric powder, garam masala, stir.


lastly, add those paneer cubes, and cook only 2 minutes, as they are already fried golden.


serve hot, with bread, or rotis, garnished with chopped coriander, some melted butter, cashew nuts etc.


if you like, you may add previously boiled green peas, to paneer masala, or even a boiled potato, cut in cubes.

Here is one of the easiest recipes I know to get you started:





Herbed Pasta with Cheese





1 lb pasta ( any kind you have in the pantry will do)


4 Tablespoons of butter


2 Tablespoons of Olive Oil


1/2 teaspoon salt


1/2 teaspoon of pepper


1 teaspoon of oregano


1 teaspoon of basil


3 cloves of chopped garlic


1 1/2 cups of parmesan cheese





Boil your pasta in heavily salted water until al dente (only slightly firm). Follow the directions of the box. While pasta is cooking, use a saucepan to melt your butter and olive oil together on a medium low heat. Add in garlic and saut茅 for about 3 minutes. Next add in your spices. Toss with the cooked pasta and top with grated parmesan cheese. Serve with a salad, and you have a meal. The whole thing will only take you about 15 minutes from start to finish.

With the release of the new movie and all, why not roasted ratatouille? You just set it all up beforehand and then make a salad just before dinner. You need:





1 zucchini


3 onions


1 eggplant


2 tomatoes


2 red, green, or yellow bell peppers


6 garlic cloves


1/3 cup olive oil


1 tsp salt


1/2 tsp black pepper


1 cup fresh basil


grated ramano or parmesan cheese





preheat oven to 450 degrees





Cut all veggies into 1 inch thick chunks and place them in a large bowl. (You might want to peel the eggplant). You need between 12 and 14 cups total. Coarsely chop the garlic. Toss the vegetables and garlic with the olive oil, salt, and pepper and spread on a baking sheet. Roast for 15 minutes and then stir vegetables . Stir again another 15 minutes. After 5 more minutes make sure they are fork-tender and juicy.





While the veggies roast chop the basil. When the vegetables are done, put them in a serving bowl and stir in the chopped basil. Pass the grated cheese at the table. Enjoy!

Vegetarian Stuffed Grape Leaves





INGREDIENTS:


1 package soy based meatless ground burger (frozen food section)


1 cup uncooked white rice


1 8 oz can tomato sauce


1/2 teaspoon salt


3/4 teaspoon pepper


1/4 cup fresh parsley, finely chopped


1 jar of grape leaves





PREPARATION:


Remove grape leaves from jar and soak for a few hours in cold water. If not soaked properly, they have a very salty taste.





While grape leaves are soaking, prepare meatless meat according to package directions.All to cool and mix with tomato sauce, rice, parsley, salt, pepper and lemon juice
Portobello Mushroom Tortellini





INGREDIENTS


1 pound cheese tortellini


2 large portobello mushrooms


1/4 cup white wine


1 tablespoon chopped fresh parsley


2 cloves garlic, minced


8 ounces Alfredo-style pasta sauce


salt and pepper to taste


1/3 cup grated Parmesan cheese





Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or, drain.


Prepare mushrooms by rinsing and thinly slicing the mushroom caps; discard the stems.


In a medium skillet over low heat, combine wine, parsley, garlic and mushrooms; stirring frequently, saute for approximately 5 minutes or until mushrooms are cooked through.


Remove skillet from heat and slowly add Alfredo sauce, stirring to blend; season with salt and pepper to taste.


Separate hot pasta into four portions and spoon sauce over pasta. Garnish with cheese
this might sound gross but it is really good you should try it


at the store buy BOCA meat from morning star farms and is vegetarian and make it into tacos

Hi! I've been a vegetarian for the last decade, and lately, I've been getting sick of some of my recipes. I've had tofu stir fry for the last 4 days straight. :P





Does anybody know of any good vegetarian recipes, whether it be for breakfast, lunch, dinner or dessert?

Ah, I know what that is like.





A cookbook that I bought a couple years ago, ';Better than Peanutbutter and Jelly'; has some good ones. You can find it on Amazon.com.





Recipes I've tried from that book that were great:


-Where's the tuna salad


-Banana bread


-pumpkin cookies


-Apple squares


-A thing with baked root vegetables


-chili





And, that cookbook aside, you can make veggie kabobs with tofu cubes. You just get those wooden skewers, pick some kind of marinade in a packet, and marinate veggies and tofu with it, then skewer them and broil them.

My favorite vegetarian dinner is a lentil bean bake





I use 2 400g cans of kidney beans


1 %26amp; a half cups of cooked green lentils


1 bunch of curly kale chopped roughly


600g of chopped canned cherry tomatoes (roma are fine otherwise)


Lots of cajun seasoning


2 teaspoons of physillium husk (obviously not a flavor thing, just for some roughage!)


Salt %26amp; Pepper


1/2 a cup of shredded tasty cheese or soy cheese if you're after a vegan recipe





Combine all ingredients but the cheese in a large bowl %26amp; season with cajun spices until it tastes to your liking, transfer to a casserole dish %26amp; sprinkle with cheese. Cook on medium heat until hot %26amp; bubbling %26amp; the cheese is brown.





Serve with mashed potato or Brown Rice

Vegetables Curry (2 servings)





Ingredients





1.5 tablespoons vegetable oil


1 tablespoon curry powder


1/8 teaspoon cinnamon powder


1/8 teaspoon nutmeg powder


1/8 teaspoon ginger powder


1/8 teaspoon yellow ginger powder


2 carrots (diced)


1 onion (chopped)


1 potato (diced)


1 teaspoon garlic powder


1 courgette (diced)


500 ml vegetable broth


150g canned small white beans


100g canned red kidney beans


100 ml cream


Salt and pepper to taste


2 teaspoons parsley leaves (minced)





Action


a. Heat the oil in a thick bottom large pan.


b. Add curry, cinnamon, nutmeg, ginger, and yellow ginger,


and stir for 1 minute.


c. Add carrots, onion, garlic, potato, and courgette. Mix well


and stir-fry for 5 minutes.


d. Add broth and cook 20 minutes on low fire, until the


vegetables are soft.


e. Add small white beans, red kidney beans, and


simmer on low fire.


f. Remove from the heat and add the cream. Mix


thoroughly.


g. Add salt and pepper to taste.


h. Garnish with parsley, before serving.











Parsley Croquettes (4 pieces)





Ingredients


75 cold cooked rice


1 large potato (sliced)


Salt and black pepper


1 red onion (fine chopped)


1 teaspoon garlic powder


2 tablespoons fresh parsley (chopped)


3 tablespoons white sesame seeds


Vegetable oil





Action


a. Cook the potatoes in slightly salted water for 15-20


minutes, until they are soft.


b. Drain it and mash them fine.


c. In a large bowl, mix the potato puree with the cooked


rice, onion, garlic, parsley, salt and pepper. Mix thoroughly.


d. Make 4 croquettes from the dough.


e. Roll them on sesame seeds.


f. Heat 1 cm deep oil in a thick bottom frying pan, fry them


for 2 to 3 minutes, until they are browned from all sides.











Curry Puffs





Ingredients


1 Potato (peeled)


1 tablespoon green peas


1/2 teaspoon curry powder


1/8 teaspoon salt


1/8 teaspoon white pepper


1 onion (rings)


Frozen Puff dough





Action


a. Boil the potato in slightly salted water.


b. When soft, drain and dice it.


c. Mix the potato, peas and onion, season with salt and


pepper for a minute or two.


d. Place this mixture into the rolled out pastry dough.


e. Sprinkle with curry powder, and wrap in triangle shapes.


f. Bake on 200掳C preheated oven for 20 minutes.





Tips:


a. Let the puff dough stand for 5-10 minutes, till it is a little


soften, before use.


b. You may increase the curry powder, or add chili powder


when desired.











Millet Porridge





Ingredients


1 cup millet's


1 cup glutinous rice


1 cup red rice


Raisins


Black sugar to taste


9 cups cold water





Action


a. Wash all rice and add it in a pot of water.


b. On strong fire cook it till boiling point.


c. Turn to low fire and continue cooking till a porridge formed.


d. Mix in black sugar.


e. Before fire turn off, add raisins.





Note: When you prefer salty, add bean paste and kelp.











Pickled Sweet Apples





Ingredients





Sweet apples (pared, cored and quartered)


500 ml vinegar


800g Sugar


A few pieces cinnamon


A few cloves





Action


a. Boil a syrup of the vinegar and sugar.


b. Add cinnamon and cloves.


c. Drop apples in syrup and cook until tender.


d. Put them in jar and pour the syrup over.


e. When cold, they are ready to eat.





Note: When you are not eating now,


you may seal it to keep for longer time.











Okra Salad





Ingredients


Some okras (string-less)


Some sweet Peppers


Dressing sauce


Vegetable oil





Action


a. Cut the ends and stalks from the okra.


b. Cook them in boiling salt water.


c. Drain and lay them in a salad bowl.


d. Pour peppers into hot oil, peel off their skins.


e. Cut them into strips.


f. Add them to the okras, and cover them with the dressing.





Dressing


Lemon juice


Olive oil


Curry powder or other spices





Preparation


Mix all together.











Chestnut Salad





Ingredients


Chestnuts


Lettuce


Dressing





Action


a. Parboil the chestnuts ten minutes, and remove the shells.


b. Cook them in boiling water until just soft.


c. Remove the brown skin, cut 1/2 cm slices, moisten,


with dressing.


d. Arrange them on cup shape lettuce leaves,


and cover them with mayonnaise.











Fig sandwich





Ingredients


1 cupful figs


125 ml hot water


1 teaspoon lemon juice


Fine chopped nuts





Action


a. Place figs in pot, and cook to a paste with the water.


b. Add juice, and set away to cool.


c. Spread on the prepared bread and dust with the nuts.





Banana Jumbles





Ingredients


4 bananas


2 cups rolled oats


1 cup raisins


40 ml olive oil


1/4 teaspoon sea salt


1 teaspoon vanilla extract


1/2 cup chopped walnuts


cinnamon powder





Action


a. Preheat 180掳C oven, for 10 minutes.


b. Mix all together, and season for 15 minutes.


c. Drop by teaspoonfuls onto the baking sheet,


and dust with the cinnamon.


d. Bake for 15-20 minutes, and serve hot.

    here are some of my favourites





    Avocado Bisque


    1 tbl Unsalted butter


    2 sm Celery ribs, chopped


    1 sm Onion, chopped


    1 sm Zucchini, chopped


    1 whl jalapeno pepper, seeded, minced


    2 cup Chicken stock or vegetable stock


    1/2 tsp Ground cumin


    1/2 tsp Dried mint flakes


    2 lrg Ripe avocadoes, peeled and pitted


    1/3 cup Whipping cream


    Salt


    Method :


    1. Melt butter in the pressure cooker over medium heat. Add the celery, onion, zucchini, and jalapeno. Cook uncovered until vegetables begin to soften, 3 to 4 minutes. Add stock, cumin, and mint.


    2. Cover and bring up to high pressure. Reduce heat to stabilize pressure and cook 5 minutes. Release pressure.


    3. Puree the contents of the cooker in a blender or food processor. Add the avocados and blend again until smooth. Transfer to a serving container and stir in cream and salt to taste. Serve hot or chilled.





    Alfredo Sauce





    A rich and creamy Italian sauce, usually served over fettucine. It's also delectable in spinach lasagna and with ravioli.





    Yield about 1陆 c


    Time 15 minutes


    Tools saucepan

    Ingredients 2 T butter


    2 c heavy (whipping) cream


    录 c parmesan cheese, grated


    1 t nutmeg


    salt





    Directions Melt the butter over medium-high heat, add the cream, and bring to a boil. Lower heat to medium.


    Add cheese, nutmeg, and a dash of salt and boil, whisking frequently, until reduced and thickened, about 10 minutes. Taste. If you don't notice a hint of sweetness, add another dash of nutmeg.





    Pour over cooked pasta, sprinkle with pepper and parsley, and serve hot.





    Notes If you're making fettucine Alfredo, this is enough sauce for about 8 oz (陆 a pound) of pasta.


    The key to excellent Alfredo sauce is in the ingredients. Because this recipe is so simple, you need to use the very best cream and freshly-grated, high-quality parmesan cheese.





    If you're worried about calories, you can use 陆 and 陆 or milk along with a T or two of flour instead of the cream, but the taste and consistency of the sauce will suffer for it.





    Variation: add peas and/or mushrooms.


    layered potatoe cake


    Ingredients (serves 4)


    Melted butter, to grease


    6 (about 1kg) coliban potatoes, peeled, thinly sliced


    70g butter, melted


    30g (1/3 cup) shredded parmesan


    1 tsp fresh thyme leaves


    Salt %26amp; freshly ground black pepper


    Mixed salad leaves, to serve


    Method


    Preheat oven to 220掳C. Brush a round 18cm (base measurement) cake pan with melted butter to lightly grease. Place the potato slices in a large bowl. Add the melted butter and gently toss until potato slices are well coated. Arrange one-third of the potato slices over the base of the prepared pan.


    Combine parmesan and thyme in a bowl. Sprinkle potato slices with one-third of the parmesan mixture. Season with salt and pepper. Continue layering with the remaining potato slices, parmesan mixture and salt and pepper, finishing with a layer of parmesan mixture.


    Bake in preheated oven, pressing the potato down with the back of a large spoon a couple of times during cooking, for 1 hour or until tender and golden. Remove from oven and set aside for 5 minutes to cool slightly. Turn onto a serving plate. Cut into wedges and serve with mixed salad leaves.





    Ingredients (serves 4)

    6 (about 1kg) coliban potatoes, peeled, thinly sliced


    70g butter, melted


    30g (1/3 cup) shredded parmesan


    1 tsp fresh thyme leaves


    Salt %26amp; freshly ground black pepper


    Mixed salad leaves, to serve


    Method

    vegetarian lasagne


    2x 400g cans cherry tomatoes* or crushed tomatoes


    100g unsalted butter


    100g (2/3 cup) plain flour


    1L (4 cups) full-fat milk


    Good pinch of ground nutmeg


    1/2 cup good-quality pesto


    300g fresh lasagne sheets


    300g fresh buffalo mozzarella* or bocconcini, thinly sliced


    200g grated parmesan


    8 vine-ripened cherry tomatoes


    Method


    Preheat the oven to 180掳C. Lightly grease a 5cm deep, 20 x 30cm baking dish.


    Drain tomatoes, reserving juice. Place juice in a pan with butter, flour and milk. Whisk over low heat for 5 minutes or until sauce thickens. Cook 2 minutes further and season with salt, pepper and nutmeg.


    Place 1/4 of the sauce in the prepared dish, swirl through 1 tablespoon pesto and cover with a sheet of lasagne.


    Add a little more sauce and another tablespoon pesto, then cover with half the mozzarella, half the drained tomatoes, 1/3 of the parmesan and a lasagne sheet. Repeat this layer. Cover with remaining sauce and sprinkle with remaining parmesan. Dot vine-ripened tomatoes on top. Bake for about 35 minutes or until cooked through and golden on top.     Many meat recipes can be converted to vegetarian recipes


    I use a recipe that calls for bits of chicken and I replace with Mushrooms! It calls for chicken stock I replace with mushroom stock or soya sauce! Any recipe that calls for egg the egg can be replaced with cornstarch and a bit of oil!

    1 cup peeled, cubed boiling potatoes


    4 tsp. vegetable oil


    1/4 cup whole wheat flour or white flour


    1 1/2 cups vegetable broth


    1 Tbs. nutritional yeast flakes

    2 tsp. soy sauce


    Salt and freshly ground black pepper


    Dough for two-crust 9-inch pie (homemade


    whole wheat pastry is best,


    but you can substitute a store-bought

    1 medium onion, chopped


    1 cup small broccoli florets


    1/2 cup diced carrot


    1/4 cup corn kernels, fresh or frozen


    1/4 cup frozen peas


    Preheat oven to 350 [degrees] F. Cook potatoes in lightly salted boiling water just until tender, about 10 minutes. Drain and set aside. Meanwhile, in medium saucepan, heat oil over low heat. Stir in flour and cook, stirring, until mixture is very thick, about 1 minute. Gradually add broth, stirring constantly. Add nutritional yeast, soy sauce, salt and pepper, stirring constantly. Remove sauce from heat and set aside.


    Roll out bottom crust and fit into 9-inch pie plate. Scatter potatoes and remaining vegetables over crust and spoon sauce over them. Place top crust on pie, crimp edges and make a couple of slits in crust for steam vents. Bake until crust is lightly browned, about 1 hour. Let stand 5 to 10 minutes before serving.

    The best place to find free vegetarian recipes is on the internet.....But the easiest recipe is vegetable salad..Not only it is cheap but at the end of the day u can lose some weight...
    Greek lentil soup





    3 cups of lentils


    1 onion sliced


    Chopped garlic


    Tin of tomatoes


    Carton of tomato juice


    3 tablespoons olive oil


    Salt and pepper


    A little sugar and 2 bay leaves


    2 sliced carrots





    Boil in large pot the lentils for about 15 mins, drain and add fresh water then add all of the other ingredients and cook on low heat until the carrots are cooked. Very cheap, tasty and easy.

    Directions


    Heat 2 tablespoons of the olive oil in a large skillet or saucepan and cook the onions and garlic until very tender, 6 to 8 minutes. Add the tomatoes, olives, raisins, white wine, capers, and crushed red pepper flakes and cook until the tomatoes have broken down slightly and the sauce is slightly thickened, 7 to 10 minutes. Add kosher salt and black pepper, to taste, and set aside to keep warm.


    Bring a large pot of salted water to a boil and cook the pasta according to package directions until just al dente. Drain the pasta, reserving 1/2 cup of the cooking liquid, and place the pasta in a large mixing bowl along with the hot pasta sauce and the basil. Toss to combine, adding pasta cooking water 1 or 2 tablespoons at a time to thin the sauce, if necessary. Serve the pasta in shallow bowls, drizzled with the remaining olive oil and garnished with the feta cheese. Serves 5-6.

    5 lbs. potatoes


    2 lg. sweet onions


    2 lg. eggs


    1/2 c. self-rising flour

    Grate potatoes and onions together. Pour off excess juice, mix in eggs then add enough flour to thicken. Salt and pepper to taste.     Classic Minestrone





    INGREDIENTS





    * 3 tablespoons olive oil


    * 1 leek, sliced


    * 2 carrots, chopped


    * 1 zucchini, thinly sliced


    * 4 ounces green beans, cut into 1 inch pieces


    * 2 stalks celery, thinly sliced


    * 1 1/2 quarts vegetable stock


    * 1 pound chopped tomatoes


    * 1 tablespoon chopped fresh thyme


    * 1 (15 ounce) can cannellini beans, with liquid


    * 1/4 cup elbow macaroni


    * salt and ground black pepper to taste





    DIRECTIONS





    1. Heat olive oil in a large saucepan, over medium heat. Add leek, carrots, zucchini, green beans and celery. Cover, and reduce heat to low. Cook for 15 minutes, shaking the pan occasionally.


    2. Stir in the stock, tomatoes and thyme. Bring to a boil, then replace the lid, and reduce heat to low; simmer gently for 30 minutes.

    Vegetarian Spaghetti


    2 cups small yellow onion, cut in eighths


    2 cups chopped, peeled, fresh, ripe tomatoes


    2 cups thinly sliced yellow and green squash


    1 1/2 cups fresh green beans (about 1/2 lb.)


    2/3 cup water


    2 Tbsp minced fresh parsley


    1 clove garlic, minced


    1/2 tsp chili powder


    1/4 tsp salt


    1/8 tsp freshly ground black pepper


    1 6-os. can tomato paste


    1 lb. uncooked spaghetti


    1/2 cup grated parmesan cheese


    Instructions:


    Combine first 10 ingredients in large saucepan; cook for 10 minutes, then stir in tomato paste. Cover and cook gently, 15 minutes, stirring occasionally until vegetables are tender. Cook spaghetti in unsalted water according to package directions. Spoon sauce over drained hot spaghetti and sprinkle parmesan cheese over top.

    Avocado Veggie Tacos


    1 medium avocado


    non-stick cooking spray as needed


    1 1/4 cup onion, julienned


    1 1/2 cup sweet green pepper, julienned


    1 1/2 cup sweet red pepper, julienned

    1 1/2 cup Fresh Tomato Salsa


    12 flour tortillas, 8-inch


    Fresh Tomato Salsa:


    1 cup fresh tomatoes, diced


    1/3 cup onions, diced


    1/2 clove garlic, minced


    1/3 tsp jalapeno peppers, minced


    2 tsp cilantro, minced


    1 pinch cumin


    1 1/2 tsp fresh lime juice





    Prepare salsa in advance by combining all ingredients. Refrigerate. Spray skillet with non-stick cooking spray. Lightly saute the onion and green and red peppers. Mince cilantro, avocado slices and slats. Fold over and serve.

    I'm a vegetarian myself-- but unfortunately I think it's best for your baby to have meat in his/her diet. Aside from protein, there are essential amino acids found in meat that our bodies cannot synthesize on their own. (I believe there's a very specific combination of legumes and vegetables that can make up for it, but I wouldn't rely on that for your child.) I'm all for vegetarianism, but I'm even going to be giving my baby girl meat until she's old enough to decide for herself whether or not she wants to live the same vegetarian lifestyle as me.     Pumpkin and Rice Cereal Mash


    Serves: 1





    Ingredients:


    1 Tbsp cooked mashed pumpkin


    1 Tbsp HEINZ Rice Cereal

    1. Add pumpkin to baby鈥檚 serving bowl.





    2. Blend in HEINZ Rice Cereal.

    Method:


    Pour breast milk or prepared formula into a small saucepan and heat gently. In a small bowl mix custard powder with a little water to a thin paste. Add to milk and stir until mixture thickens.





    Spoon out required amount into baby鈥檚 bowl. Allow to cool. Refrigerate remaining portion.





    Hint:


    Serve with pureed or mashed fruit.

    Ingredients:


    2 fresh carrots.





    Method:


    Peel and wash carrots, dice. Microwave or place in a small saucepan with 1 tablespoon of boiling water and simmer gently with lid on until tender.





    Allow to cool. Blend in a food processor until pureed or fork mash.





    Place 1-2 tablespoons in baby鈥檚 serving bowl, place the remainder in an airtight container and refrigerate or freeze.

    dont listen to the first answer. feed a baby a vegi diet would not effect tehm at a ll since you're breastfeeding. all babies really need for the first year of life is breastmilk. waht you're doing sounds great. introducing solids the first eyar is more for showing baby how to eat another way
    Sorry, my midwife said no solids until six months when I breast fed my son. You might want to double check with her.





    When you do start smooshed carrots were popular with my son. Try some combinations like mashed taters and carrots or peas and carrots mashed together. Try to make it fun for him too! Most infants/toddlers love fruits of any nature you just have to careful that they aren't too stringy because that makes them hard to mash up. Try some oven roasted butternut squash, summer squash or zuchini. At this age you don't really need to add the butter, salt or pepper that adults would normally add to food. My grandmother always wanted to slather the baby food in some kind of fat -eek.





    They do make little grinder thingys (sorry i can't remember the name-maybe it was called a ricer?) to make your own baby food but I found it to be cumbersome to use and horrible to clean. It was just as easy to mash the food with a fork!





    *PS* Enjoy him at that age - mine's turning 9 this month - they grow up way too fast!! :)








    *edit* double check to see if nuts of any kind are recommended for baby's under the age of 1. I think the current recommendation is to not introduce them until later due to allergy factor.
    well keep in mind that the American academy of pediatrics doesn't recommend solids until 6 months and infants don't need solids until 1yr. up until that point they are really just getting used to the texture and the idea of eating. Breast milk is a complete food and the only thing they really need for that first yr. Breastfeeding is the most amazing thing you can do for your child and I commend you for doing it!


    I started my daughter on avocado. Very easy to make and extremely nutritious. A great way to do it is to mix up alot and use a ice cube try to freeze it (each cube is one oz) pop them out when you need them. Don't use microwave, you can heat them up on the stove using a double boiler. You will need a food processor to make it, just add a little water or breast milk when you are processing it to get the right consistency. My daughter loved it. I also did squash, zucchini and sweet potatoes that way. I don't recommend peas because you have to remove the shell (they never seem to get mixed in and baby could choke.)
    You need to be very careful with how much veggies you feed him at first. Veggies like broccoli seem great, but can create a lot of wind in the baby at early ages which gives them a tummy ache.





    I would recommend speaking to your pediatrician, perhaps they can guide you to making great vegetarian foods for your child.
    A great way to start weaning is just to try one vegetable at a time, for example purreed carrots one week, brocolli another. It will get your child used to the various tastes and a baby needs to taste something for at least a week to get used to the new flavour. As he's still very little I would recommend a new vegetable a week at first so as not to upset his delicate tum too much !! but go for good flavoured veg such as sweet potato etc. I used to make up an ice cube tray of each flavour and keep them in the freezer. At feeding times I'd defrost a couple of cubes and it was plenty for her so I wasn't preparing veggies every day !! Hope this has been of some help
    You shouldn't be feeding your child a strictly vegetarian diet. There are certain proteins that your growing child needs that he/she can only get from meat. My 9 year old niece has never eaten meat and she is sickly skinny, has bad teeth and and unhealthy pallor to her skin.

    Most kids don't eat meat until they are over 1 anyway. At that time, you may want to talk to your doctor about ways to make sure your child gets the right nutrients to grow healthy and strong.     I use agave nectar for the liquid sweetener. It's a great substitute for honey. You can get it at most natural foods stores. I also cook the tofu in toasted sesame oil.

    Here goes, Lots of good ones:


    Cheese Starata


    Stale bread (French Bread is good can be any kind) cubed


    spread bread in oven proof baking dish


    IN blender mix 1 egg, a fist size chunk of cheese cut into smaller cubes, 1/4 stick butter, cup 1% milk. blend and pour on bread. If not covered add enough milk to cover then leave for 8 hours or overnight in fridge.


    Bake @ 350 degrees for 45 minutes. Remove from oven and serve warm. Its a rich, fluffy dish that goes well with most any vegetable side but my favorite is broiled tomatoes.





    roasted tomatoes


    slice tomatoes 1/2 inch thick and place side by side in baking pan, sprinkle with olive oil and oregano. bake at 450 for 15 minutes. also good with butter and bread crumb crust on the top. Add that in the last 5 minutes of cooking.





    Combination root vegetables like Onions, Carrots, Parsnips, potatoes are good coated in olive oil and roasted. serve with cheese and bread.





    pasta Prima Vera the easy way, Jar Alfredo mix combined with package mixed Italian vegetables. Cook vegetables then mix with sauce and serve on any pasta you like.
    i just call this mmmmmm dish...shallot onions,mushrooms,snap green peas,cubed potatoes,courgettes,olives,cherry tomatoes peppers (you can use your own various combinations) feta or halloumi cheese,then either sliced veggie sausage or quorn pieces.....boil potatoes,shallots,courgettes and peas in water until soft but not so they break up just for about 10 Min's,drain and put them in large oven proof dish add rest of ingredients chopping cheese into cubes pour a little soy sauce over bake in oven on medium heat for about 30/45 Min's stir occasionally ...have it on its own or with salad when you have finished sit back and say ,mmmmmmmmmm ...enjoy
    As another Yahoo! Answers member wrote, and I second, the *Morningstar Farms* meatless veggie crumble product is great for Chili!!! Of course there are MANY variations of ';Chili';, and the word itself carries different meanings. I'm talking about what my mother made for us while growing up in the mid-atlantic region of the USA. It's known as ';Chili con Carne';....loosely translated.....';Chili with meat';. Here's a quick and I think, tasty recipe for the Vegetarian alternative for this:





    1 Bag Morningstar Farms Veggie ';meat'; Crumbles


    1 15.5 oz. Can Red Kidney Beans with the juice


    1 15.5 oz. Can Pinto Beans with juice


    1 15.5 oz. Can crushed Tomatoes


    1 Packet Chili seasoning mix (French's and Mc Cormick have nice flavored mixes of differing levels of heat)





    It's so easy to put together. Just put the ';meat'; crumbles in a dutch oven and heat/brown them a bit(Like 2-3 minutes on med-high heat) with canola oil (don't overdue this, they're already cooked and ready to go really). Then pour in the rest of the ingredients and the whole packet of chili seasoning. Make sure to get the chili seasoning to dissolve and mix up well. Bring it to a boil/bubble, then reduce to low simmer for (1) hour (longer to get the flavors to mingle more). Voila, Chili con carne for vegetarians. It may not be satisfactory for Vegans, but I'm sure if you did your research you could come up with a recipe very close to this and acceptable for Vegans.





    Hope you try It!!! I just made it this passed weekend and I really like it (with some cornbread). I should mention that I'm a pesca-lacto-ouvo Vegetarian, which means that I still eat Eggs, Milk or Dairy Products, and Fish. So, some may argue that I'm not really a vegetarian, but Veggies, Fruit, Legumes, Grains, and then the aformentioned other foods, in that order, are included in my diet.

    I make this potato cassarole. It's fantastic: Ingredients are as follow: 24 oz. frozen hashbrown cubes (thawed), 16oz sour cream, 2 c. shredded cheese, 1 can cream of mushroom(or anything you like), 1 small onion, 2 tbs butter, 1 c. cornflakes


    To Prepare: Turn (lightly mix) hashbrowns, sourcream, cheese, cream of mushroom, onion in bowl. Put in 13x9 glass or metal pan. Crush cornflakes and sprinkle over top. Melt butter and pour over cass. Bake at 350 for 1 to 1 1/4 hrs or until golden and bubbly.





    It's the greatest recipie.
    Stir Fry-Rice, broccoli, carrots, baby corns, water chesnuts. Morning Star also makes great veggie products...Meatless sausage, meatless burgers, meatless meat for chili's... Yum.

    Soak your beans over night, then in the morning:

    2 cloves garlic, chopped


    10 medium mushrooms, sliced


    1 large green pepper, sliced


    1 medium-large onion, sliced

    10'; tortillas


    cooking oil


    garlic powder


    black pepper

    In a frying pan saute garlic cloves, mushrooms, green peppers, onions until soft but still slightly crisp. In a bowl mix cooked rice, black beans together. In another pan heat about 1/2'; inch of cooking oil. Warm the 10'; tortillas in the microwave until soft. Place a 1-2 large spoonfuls of rice and beans, top with a large spoon of vegetables, and sprinkle with mozarella cheese. Season to taste with garlic powder, onion salt, crushed red pepper, and black pepper. Fold in the edges tightly, and place folded edges down in hot oil. Brown each side until golden brown. serve on a bed of lettuce and tomatoes topped with guacamole, sour cream and salsa. Very tasty!!
    For something quick, I make some rice, throw in some beans or lentils, and combine it with a bunch of vegetables. And spices always help, so if you can grow them, its really easy to find some oregano and basil. (Not to mention the many other delicious herbs of the world)...Herbs really boost the flavor when it comes to rice and beans-its such a staple universally!


    If you can, try mint with couscous and pine nuts; you'll be begging for more, I promise. (:


    Good luck! After a bit of practice, it'll be easy to find almost any dish and turn it into something vegetarian.


    You can go look for Japanese food, because even if you don't eat fish, its easy to find food with enough protein and nutrients..

    The simplest one to make for a bachelor like me...





    Take any and all veggies you can think of and saute them with a small quantity of olive oil:





    Brocolli


    Mushrooms


    Baby Corn


    Yellow and Red bell peppers





    Add raw veggies to them like:





    Red and Green Cabbage


    Carrots


    Tomatoes


    Salad leaves





    Add some boiled potaoes and fresh cheese, and you have a salad bowl ready.





    Prepare some custard ...even yogurt would do and mix any and all fruits in it...add some nuts like almonds, peanuts and cashews, raisins, etc to it.





    A great meal with a great desert!!!

    cut up some red potatoes, onions, and carrots and throw them in a large dish on the stove with a little olive oil and minced garlic garlic and Italian seasoning ... saute for 2-3 minutes, let cool ... while that is cooling, cut tomatoes into quarters and cut up zucchini and squash ... put those in a large bowl with garlic, a teaspoon of balsamic (you can add more), some Italian seasoning and olive oil ... stir to mix seasonings thoroughly ...





    in a crock pot add about a cup and a half of the potato mixture, then make another layer with a cup and a half of the tomato mixture, then spread on 3 tbsp of spaghetti sauce and a sprinkle of Parmesan and or mozzarella ... repeat until the crock pot is full, top with cheese and cook on low for about 4 hours ...

    jamaican jerk mango seitan

    onions, 3 cloves or more garlic, 1 tsp ginger, 1 tsp cumin, 1 tsp allspice, 1 tsp paprika, 1/4 cup soy sauce, 2 tablespoon agave, 1/4 cup ketchup, mango





    cut seitan into bite sized pieces. fry on both sides until browned





    fry onions, garlic, ginger in oil for a few minutes. add cumin, allspice, paprika and fry on low heat for a few minutes. add soy sauce, agave, mango. cook for a few more minutes
    well my friend gave me this recipe for a unique pizza, instead of the sauce you spread cream cheese on the dough and sprinkle ranch seasonings on top. then add some fresh veggies such as broccoli, carrots and sugar snap peas just to name a few. then you bake it in the oven untill the crust is the way you like it ;)

    Cook Ravioli as instructed on package. Steam Broccoli in microwave. Combine cooked ravioli, broccoli and sauce in pot and cook on very low until sauce his hot.


    Very fast, very easy and delicious! I wanted to add a can of mushrooms to it also, but my little sister was over and doesn't like them...dang her! haha.

    A glob of peanut butter spread on a slice of bread.
    try this - it's really tasty:





    quinoa with chickpeas, squash, aubergine and feta





    * 300g quinoa


    * 600ml vegetable stock


    * 150g dried chickpeas


    * 1 tsp bicarbonate of soda (optional)





    vegetables:





    * 250g butternut squash, cut into small cubes


    * 250g aubergine, cut into small cubes


    * (or 500g of one of them)


    * 3 tbsp olive oil


    * 6 garlic cloves


    * 1 tsp ground cumin


    * 1 tsp fresh thyme leaves or 1/2 tsp dried thyme





    dressing:





    * 2 tbsp sherry vinegar


    * 3 tbsp olive oil





    serve with:





    * 100g feta cheese


    * 4 tbsp pumpkin seeds, dry roasted for a couple of minutes





    soak the chickpeas in plenty of water overnight. discard the water and cook them in fresh water with the bicanonate of soda for 1 -2 hours, until tender. rinse.





    mix the honey, cumin, soy sauce, 3 tbsp oil and the thyme leaves. mix with the cubed vegetables and unpeeled garlic and roast in a hot oven (200 C) for 30 minutes, turning them occasionaly.





    to make the dressing, remove the garlic cloves and mash 3 of them with 3 tbsp olive oil and the sherry vinegar.





    add the chickpeas to the squash and aubergine and keep everything warm in the oven.





    soak the quinoa in cold water for 20 minutes. drain it and cook in the stock partially covered with lid until all liquid is absorbed (20 -30 minutes).





    mix the quinoa with the vegetables and chickpeas, add the dressing and top with crumbled feta and the seeds.

    When I'm at a loss, I go to the mambosprouts.com website and search their recipes. They have a ton of vegetarian ideas.





    Tofu totally takes on whatever you put in it so don't be afraid to sautee it with a number of things: rosemary %26amp; mustard, chile powder %26amp; cumin, tomato %26amp; basil. Cook it down - I like to cook as much of the water out as possible. Some people don't like the ';rubbery'; texture of tofu, but that can be avoided if you cook it down enough.

    Do an online search or go to your library. Or ask local 7th day adventist church for a cookbook of theirs - they usually come out with one a year, don't they.
    Wendy Turner's Absoultely animal free cook book is great but check that certain ingredients are still vegan and if not substitute them. She states to use Linda McCartney's sausages in one recipie. Sir Paul sold the company and while the sausages are still vegetarian society approved nothing on the packets say that they are vegan!!
    Read any books by Gary and Steve Null.The 15 minute Vegetarian Gourmet by Paulette Mitchell (1987).

    Curried Rice: Chop 10 cups of your favorite vegetables (frozen can also be used) and onion and pan fry with some water (if not frozen) with salt, pepper, garlic and a teaspoon of curry powder. After 5 mintues, add in 1 can of chopped tomatoes (with sauce). Once the vegetables are cooked to your desired softness (I usually cook for 15 mintues), stir in cooked rice and cook for addtional 2 mintues. Let sit for 5-10 minutes before serving. This dish is not only fat free, but it makes many servings, isvery healthy, and cheap to make.Do you know of any good vegetarian recipes?     I eat tofu, tofu stirfry,made with Pam. I also eat tons of vegie soup and bean soups, my favorite is potatoe soup. Beans are also good. Bannas, melons, mango and plums pears too work well.
    I had a similar problem and found that cutting out almost everything for a while really helped . . . I ate bananas and crackers for months, it seems, but it seemed to kind of reset my system and as I introduced other foods back into my routine, I was fine . . . even fish but I've not had any meat again since I started having the problems.
    Just boil or steam any veggies add indian spices and eat it.

    Vegetarian Lasagna


    Ingredients


    2 bags of morningstar meal starters recipe crumbles


    cut up onion


    tomato paste, 2 small cans


    Sargento Mozzarella cheese


    Sargento Cheddar cheese


    1 box of baking lasagna


    a couple jars of Prego with mushrooms


    salt and pepper


    butter, to saute


    Optional-peppers





    Saute onions until they become sweet but not caramelized.


    Add tomato paste and saute until it sticks a little


    add meal starters, bag 1


    saute until heated


    add tomato sauce


    pour on to baking lasagna and layer

    SAVOURY PANCAKES

    Ingredients...


    1 cup of plain white flour


    1 cup of chickpea flour


    1/2 cup of savoury yeast flakes (optional)


    125g can of corn kernels


    1 medium onion (diced)


    small amount of salt


    Water.


    Oil.


    1 Avocado.





    Method.....


    Dry mix flours,salt %26amp; savoury yeast in a bowl.


    Add a small amount of water to start with and stir in, keep adding small amounts of water and stirring in until you have a pourable batter.


    Add corn kernels %26amp; diced onion and stir into mixture.


    Heat a fry-pan to medium %26amp; add enough oil to coat the pan.


    Pour out some of the mix into pan to make small pancakes and allow to brown lightly before turning over.


    Serve on a plate with some sliced avocado on top.

    I'm generally a meat-eater, but my vegetarian friend used to make this for me, and it was always super yummy (not to mention easy).





    Open one package of firm tofu, and let it drain in a colander over the sink (this can sit for quite a while, so don't feel rushed about it).





    Boil pasta of your choice.





    Break up the tofu in a saute pan, and scramble it, just like eggs. Based on your grandson's flavor preferences, you could mix in some pesto (my favorite), his favorite veggies (cherry tomatoes are great in this), or even just some parmesan cheese.





    Serve the scrambled tofu on top of the pasta.
    I agree with one of the other members who posted here: mystery meat isn't something a caring grandmother should give! :) But I think you probably just gave that to him as a last resort, no?





    A nice, slightly sweet treat to give him that would provide complete protein would be something we usually had when I was growing up poor: baked beans mixed with rice. This is such a comfort food for me now. You can also add corn, or just go for broke and add more veggies (carrots, broccoli, etc.), top with a little cheese, and bake as a yummy casserole.
    Burritos are always fun, and you can easily add tomato, avocado, and lots of healthy things. Maybe he will even eat whole wheat tortillas.





    My daughter loves vegetables like peas, corn, asparagus, or green beans with pasta and marinara sauce.





    Bagel Pizzas are good too, and you can stuff them full of veggies as well, just put the cheese on top.
    I have been a Vegetarian all my life. And I have never had meat. All I can say is that you don't need meat to get the proper nutrition. My mom never made anything that required a recipe. She would just make a little bit of some kind of green veggie (i.e. broccoli, zucchini) and a little bit of pasta with either cheese or red sauce. You can also try burritos or salads.

    Baked Corn





    INGREDIENTS:





    2 cups whole kernel corn


    1/4 cup chopped onion


    1/4 cup green bell pepper, chopped


    25 g margarine


    2 tablespoons all-purpose flour


    1 teaspoon salt


    ground black pepper


    3/4 cup milk


    1 egg


    1/3 cup cracker crumbs


    1 tablespoon butter, melted





    DIRECTIONS:





    Preheat oven to 350 degrees F (175 degrees C).


    In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.


    Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.


    Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

    SINGAPORE NOODLES WITH PEPPERS





    ¼ cup oyster sauce


    1 tbsp oil


    1 tbsp curry powder


    1 red, yellow and green peppers


    1 tbsp corn starch


    2 large minced garlic cloves


    1 tbsp cold water


    1 ½ c chicken stock


    ¾ whole wheat spaghetti


    dash hot pepper sauce





    Add pepper, garlic and stock to skillet. Cover and cook for 2 min. Stir in oyster sauce and curry. Blend cornstarch with water, add to skillet.


    Bring to boil stirring for 1-2 min or until thickened. Stir in hot pepper sauce. Meanwhile cook spaghetti until tender, drain and mix with pepper mixture.


    Makes 6 servings.








    SPAGHETTI SQUASH





    1-2 lb. spaghetti squash


    1 tbsp margarine


    ¾ c onion


    2 tsp crushed garlic


    1 ½ c mushrooms


    ¾ c diced green pepper


    250 mL tomato sauce


    1 tsp each oregano and basil


    1/3 c Parmesan cheese (you can get vegan substitutes)


    Pierce squash. Cook squash 8-10min or until soft OR bake 350F cut lengthwise, put face down in water 40-50 min.


    Discard seeds. With fork scrape out spaghetti like strands.


    In frying pan melt margarine. Sauté onions, garlic and green pepper for about 5 min. Add squash cook for 2 min. Add tomato sauce, oregano and basil, combine well.


    Place in baking dish and sprinkle with Parmesan. Broil for 2 min or until browned.








    LASAGNA WITH ZUCCHINI, RED PEPPER AND MUSHROOMS


    Preheat oven to 350 F (180C). 13”x9” (3L) baking dish spray with non-stick vegetable spray


    9 pre cooked lasagne noodles


    1 tbsp veg oil


    1 ½ tsp crushed garlic


    1 c chopped zucchini


    1 c onion


    1 c diced sweet red pepper


    1 c sliced mushrooms


    2 c tomato sauce


    540 mL (19 oz) crushed tomatoes


    1 tsp dried basil


    1 tsp dried oregano


    1 ½ c 2% cottage cheese


    ½ c 2% milk


    ½ c grated Parmesan cheese


    8 oz shredded mozzarella cheese


    In large nonstick skillet, heat oil; sauté garlic, zucchini, onion, red pepper and mushrooms until softened, approximately 8 minutes.


    Add tomatoes, sauce, basil and oregano; cover and simmer for 15 minutes, stirring occasionally. Meanwhile, in food processor, combine cottage cheese, milk, and Parmesan cheese. Set aside. To assemble, arrange 3 noodles in bottom of baking dish.


    Pour 1/3 of sauce over top. Pour half of the cheese mixture over top. Repeat layering once. Top with remaining 3 noodles.


    Pour remaining sauce over top; sprinkle with mozza cheese.


    Bake, uncovered, for 30 minutes or until hot. Let stand for 15 minutes before serving.


    Make ahead: Prepare and/or bake up to a day before. The baked lasagna can be reheated in a 350F oven, covered, for 20 minutes.


    Tip: Try other vegetables for a change.


    There are numerous cheese substitutes you can get for vegans.





    LEMON PEARS AND CREAM





    ½ c up water


    1 cup sugar


    1 small lemon thinly sliced


    6 ripe med Bartlett pears


    Lemon Custard:


    ¼ cup sugar


    ½ tsp lemon peel


    1 tbsp cornstarch


    1 cup half %26amp; half (or milk)


    2 egg yolks (slightly beaten)


    ½ tsp vanilla





    In 2-qt casserole combine water, sugar and lemon slices. Cover. Micro high 3-4 min, or until boils. Peel pears, leaving stems in. Arrange pears upright in casserole, placing one in centre. Baste with sauce. Cover. Micro 7-11 min or until pears are fork tender. Cover. Refrigerate.


    In small bowl combine sugar, peel and cornstarch. Blend in half and half. Micro 1.5-4 min or until mix boils and is slightly thickened, stirring every 30 sec. Blend small amount of thickened mix into egg yolks. Return egg ix back to thickened sauce and blend.


    Reduce power to 50%. Micro 1-1 ½ min or until very hot, stirring every 30 sec. Stir in vanilla. Cover and chill.


    Serve pears with lemon custard sauce.
    apple snickers salad is a great summer ';salad';





    one apple chopped into chunks, 1 box of instant vanilla pudding (follow directions on the box to make it)2 king size snickers bar and one tup of cool whip.





    add the apples to the vanilla pudding and mix, add 1 cup of cool whip and mix, mash up the snickers and mix





    voila! keep refrigerated, soooo yummy in the summer!

    Lots of soups! Salads, veggie burger meals, lots of pasta, and some casseroles too! Try this easy recipe:


    1 pound spaghetti


    1 cup broccoli florets (florets are the top of the broccoli)


    1 15 ounce can drained corn


    1 cup fresh sliced mushrooms


    1 cup sliced carrots


    2 8 ounce cans of tomato sauce


    1. Cook pasta according to directions on package. Do this in salt water in an al dente (really tender) pasta


    2. Combine the broccoli, corn, mushrooms, and carrots in a large sauce pot. Add sauce. Cook on medium heat for 15-20 minutes stirring occasionally. Serve sauce over spaghetti.


    I copied this recipe off of the Net, but it is completely vegetarian and easy to make with food that is always found in the house except maybe mushrooms, but you don't have to add ALL of the veggies. It sounded really good to me and I hope you like it too. Try other recipes too by experimenting in the kitchen. I wish you best of luck!What are some easy and good vegetarian recipes?

    I am also looking for a vegetarian lasagna recipe as close to the real stuff as possible. What can I do to make it ';not watery'; Please send any of your best vegetarian recipes.I am looking for good vegetarian recipes.?
    The best way to make a lasangna not watery is to not boil the noodles. I use a ';hot cheese'; mixture to pour over the vegetables, tomato sauce and noodles (uncooked). The hot cheese is a combination of milk, ricotta, mozerella and white pepper. I'll look for the recipe and modify my message if I can find it. It really is the best, and easiest veggie lasagne I've had. It's just delicious.I am looking for good vegetarian recipes.?

    2 medium zucchini


    3 medium yellow squash


    1/2 green bell pepper


    1/2 red bell pepper


    2 medium carrots


    3 medium sized red potatoes


    1 red onion


    3 tbsp ricotta cheese


    1 box of Barilla lasagna shell (the one that you can cook without boiling)


    1 bottle of pasta sauce


    Seasoning:


    4 tsp crushed red chilli pepper


    2 tsp dried chives


    2 tsp dried parsley


    salt and pepper as needed





    Dice all the vegetables. Drizzle some olive oil on them, sprinkle with the seasonings, cover with aluminum foil and bake for an hour at 350 degrees. When the vegetables are cooked, add the ricotta cheese. This will be your lasagna stuffing. Follow directions on the Barilla box for how to assemble the lasagna.





    To make it not watery, just add a few bread crumbs to the sauce.

    12 lasagna noodles


    2 tablespoons olive oil


    2 heads fresh broccoli, chopped


    2 carrots, thinly sliced


    1 large onion, chopped


    2 green bell peppers, chopped


    2 small zucchini, sliced


    3 cloves garlic, minced


    1/2 cup all-purpose flour


    3 cups milk


    3/4 cup Parmesan cheese, divided


    1/2 teaspoon salt


    1/2 teaspoon pepper


    1 (10 ounce) package frozen chopped spinach, thawed


    1 (8 ounce) container small curd cottage cheese


    24 ounces ricotta cheese


    2 1/2 cups shredded mozzarella cheese, divided

    DIRECTIONS:


    Preheat oven to 375 degrees F (190 degrees C). Grease a 9 x 13 inch casserole dish.


    Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.


    Heat oil in a large cast iron skillet over medium heat. When oil is hot add broccoli, carrots, onions, bell peppers, zucchini and garlic. Saute for 7 minutes; set aside.


    Place flour in a medium saucepan and gradually whisk in milk until well blended. Bring to a boil over medium heat. Cook 5 minutes, or until thick, stirring constantly. Stir in 1/2 cup Parmesan cheese, salt and pepper; cook for 1 minute, stirring constantly. Remove from heat; stir in spinach. Reserve 1/2 cup spinach mixture. In a small bowl combine cottage and ricotta cheeses; stir well.


    Spread about 1/2 cup of spinach mixture in the bottom of the prepared pan. Layer noodles, ricotta mixture, vegetables, spinach mixture and 2 cups mozzarella cheese, ending with noodles. Top with reserved spinach mixture, 1/2 cup mozzarella cheese and 1/4 cup parmesan cheese.


    Bake in preheated oven for 35 minutes, or until lightly browned on top. Cool for approximately 10 minutes before serving.

    This is an old Persian recipe:


    1.at first chop 1 Kg of spinach, and Cook it in one glass of boiling water and after it was cooked squeeze it and let it be cold.


    2.chop an onion, fry it, and add cold cooked spinach to the onions, and fry it well.


    3. add some salt and spice to it, and let it be cold.


    4. then add some yogurt to it and stir it.


    5.the food should be served cold.

    fry the curry powder in a bit of oil... add the rest... simmer...and serve over rice

    Can someone suggest some good vegetarian recipes?

    I'm allergic to sea foods and dairies and I can't stand the taste of meats. I could eat eggs with no problem, and beans upset my stomach sometimes.     My personal fave, and way easy, is to make a veggie soup - basically whatever veggies you like, but I like carrots, celery, tomato chunks, potatoes and squash, with a whole grain like barley, brown rice or quinoa (keen-wa), and season however you like (I personally like a few cloves of chopped garlic and most of a bunch of chopped cilantro). This is somewhat Tex-Mex (regional Mexican variation, not true authentic Mexican food), but definitely tasty! Also, use less water to make it more hearty and less broth-y, if you want to feel fuller.Can someone suggest some good vegetarian recipes?

    (just a quick note on parmesan cheese or Parmagianno Reggiano (proper name), it is not even vegetarian because it is made with animal rennet so watch out for that if you use that recipe as well as watch out for it in pesto and that stuff in the green bottle with the krapt food logo on it is probably not too be trusted either probably not real or has loads of chemicals for shelf stability!)
    Ingredients


    1 9-oz. package frozen cut green beans


    1/2 of a 16-oz. package frozen cauliflower


    1 14.5-oz. can diced tomatoes with basil, garlic, and oregano


    1/2 cup chopped onion (1 medium)


    1/2 cup sliced celery (1 stalk)


    1/4 cup regular barley


    1 clove garlic, minced


    1/4 tsp. ground black pepper


    3 cups reduced-sodium chicken broth


    1-1/2 cups reduced-sodium vegetable juice


    1/4 cup purchased pesto (optional)


    Finely shredded Parmesean cheese (optional)


    Directions


    1. In a 3-1/2- or 4-quart slow cooker, place frozen green beans, cauliflower, undrained tomatoes, onion, celery, barley, garlic, and pepper. In a medium bowl, combine chicken broth and vegetable juice. Pour over vegetable mixture in cooker.





    2. Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours. If desired, top each serving with pesto and Parmesean cheese. Makes 6 to 8 side-dish servings.

    2 eggplants


    2 zuccinies


    1 can of tomato sauce


    1/4 cups of olive oil


    1/4 cups of Worcestershire sauce


    A dash of soy sauce


    Adash of Hot pepper sauce


    INSTRUCTIONS





    Chop all your vegetables,then put them all into a frying pan.Add the tomato sauce then the olive oil,the Worcestershire sauce,the soy sauce,and finally the Hot pepper sauce.


    Then fry for about 15 to 20 minutes.


    This goes great with some rice.
